Black tea, from China referred to as "red tea," was discovered in the mid-17th century and quickly became a hot commodity due to its smoky flavor and ability to retain and improve its flavor with age. The British traders fell in love with it and purchased as much as they could until the Dutch took over the market. The British then discovered black tea in India, creating blends such as Darjeeling, Earl Grey, and Orange Pekoe. Today, 90% of all tea sold in the US is black tea and it remains a staple in British royalty, often indicating wealth and status. Tragically, okra made its way to the United States via the transatlantic slave route and became a staple in southern cooking. Farmer, educator, and author Leah Penniman sheds light on how African women even braided okra seeds into their hair before boarding slave ships, symbolizing hope for future sovereignty. Today, okra is a popular crop known for its heat-loving characteristics and its ability to improve soil fertility. The modern baguette is a versatile ingredient in many dishes. From breakfast croissants to the classic French sandwich, the Croque-monsieur, to bruschetta topping to panzanella salad. The baguette was originally made to be a cheap and quickly produced alternative to other breads in early 20th century France. In WWII it was also used as a form of currency called "pain de marché", because of food shortages. Today, it's a staple and iconic food of French culture enjoyed around the world. Arizona is filled with all kinds of people which makes the diversity of the food rather large, but with a charge. It brings the heat, whether with the spice level, the meltiness of the cheeses, or the heat of the sun making anything cold valuable and anything hot better be worth it. Will it be? If it is anything like the Grand Canyon or the warrior known worldwide then Arizona has a great chance. Find out and listen to see what yer missin!

Welcome to Culinary Convo’s Willamette Valley Spotlight! Where we talk about the best in the Pacific Northwest, and where we highlight the greats that make up the valleys of Oregon State. I am your Host Devin Ream, and this week we are talking with a Willamette Valley cornerstone. Starting over 90 years ago Ed Zielinski bought some farmland in Sheridan, OR and started to grow in the valley, in business, and in family and today we know all that work shows up on E.Z. Orchards Farm Market off of Hazelgreen Rd. in Salem, OR. Known in the area for some of the best cider around, the most colorful and in abundance produce and one of the only places you can stop on by and get a half dozen or dozen of your favorite cake donuts or by late spring and summer you can see many folks out around the park tables and trees enjoying strawberry shortcake or any other wide variety of cold treats near the Shortcake Stand. They host E.Z. Orchards Harvest Fest every year with live music and teaching all the local youth about Ag Culture and agriculture and how to be a great farmer of the many crops that grow throughout the valley by offering educational tours in the month of October, donating weekly to the local food bank, and are involved in a number of ag related organizations such as the Oregon Farm Loop and Oregon Farm Bureau. They also collect and sell a lot of Willamette Valley’s great products and you can follow their in season eats and their other product treats by giving them a like or follow on Facebook or Instagram, and as always - to check out what is at the shortcake stand or what flavors of donuts are going on right now (which are Strawberry, Lemon and some days chocolate) go on to ezorchards.com and check out all of their offerings. I am speaking today with Claire Zielinski to talk shop.

This episode of Willamette Valley Spotlight is gonna be a hot one, but not so bad that you are gonna want to run to the ocean, The Columbia, or The Willamette. I list these off because these waters help grow the peppers that eventually become one of the most curated, organic, and specialty hot sauces you can find. The ground, the sun, the air, and the water do a lot of the work, or so my guest might tell you, but if you follow him on Instagram or Facebook you will see that there is quite a bit of human power behind this operation. Shaun Winter is the owner, operator, farmer, cultivator, and harvester of the peppers and hot sauce that is listed as one of the 28 best hot sauces on Serious Eats by J. Kenji Lopez-Alt, and the only hot sauce using the Hot Winter pepper that has been raved about in Portland Monthly, Huffpost.com, Gear Patrol.com’s 5 Best Hot Sauces from The PNW, TheseSaltyOats.com, and 2017 Good Food Awards finalist, Hot Winter Hot Sauce company. You can visit his website hotwinterhotsauce.com and order individual bottles or wholesale, and you can also go to his Find-A-Store tab and buy it in the Willamette Valley or specialty stores near you, but Shaun also has a Fuegobox.com exclusive with Bulgarian Carrot, and has been featured with Fuegobox on his Santa Fe Grande, and original Hot Winter pepper sauces. Want to get the latest batches and the newest heirloom peppers for your countertop and so that it be included in your famous burger sauce? I promise I won’t tell, but you will need to sign up for Hot Winter’s newsletter and get ready to be amazed by the heirloom peppers and flavors headed into your email inbox. Fermentation, farming, and flames is the name of the game for Hot Winter, but also it is being a good steward of the land and of the people by keeping things local. The fermentation and the peppers offer a variety and aging quality like wine not found in other sauces and truly makes it one of a kind.
