The Cave Series: A Journey Through Time and Bourbon
In the world of bourbon, tradition, and innovation often go hand in hand, creating a rich tapestry of flavors and experiences. The Cave Series from Holladay Distillery is a prime example of how an age-old tradition can be reimagined to produce something truly unique. This is the story of how the Cave Series came to be.
The story begins in 1856 when this renowned distillery was founded. Its history dates back even further, with the property's origins tracing back to a time before the distillery itself. On this historic site, there was a cave, built in 1837, alongside an original still house erected in 1839. These structures served a purpose, not for aging bourbon as we know it today, but rather as temporary storage for barrels and a place where Ben Holliday, known as the stagecoach King, would load up barrels of bourbon onto his stagecoaches. Of course, the exact details may vary depending on who you ask, but that's part of the charm.
As the years passed, the cave ceased to be a storage facility and was transformed into a tourist attraction. Visitors would watch a video and experience a piece of bourbon history. Yet, the distillery's team believed there was more to this cave, a potential waiting to be unlocked.
The seed for the Cave Series was planted during a casual conversation between two key figures from the distillery: Patrick Fee, VP of Sales and Marketing, and Kyle, the Master Distiller.
One evening, after a release party (and despite Kyle's somewhat tongue-in-cheek comment about the marketing team's creativity), they discussed the evolving trends in the bourbon industry.
Secondary finishing, the process of aging bourbon in different barrels after the initial maturation, had become increasingly popular. Distillers were experimenting with various barrel types and aging conditions. This conversation led Patrick and Kyle to a pivotal idea – what if they could use the historic cave for secondary finishing?
This idea quickly turned into action. The distillery decided to embrace the experiment wholeheartedly. Barrels were placed within the cave, and the journey of the Cave Series began. For a year, these barrels were stored in the cave.
The goal was to create something exceptional to discover how the bourbon would evolve when subjected to a secondary finishing process. While the outcome was uncertain, the team was fueled by their commitment to authenticity and their determination to honor the distillery's heritage.
After months of waiting and experimenting, the moment arrived. The distillery released the first two expressions of the Cave Series, marking a significant milestone in their journey. The traditional double oak and the Applewood Smoked barrel stave-finished bourbons made their debut.
These releases, aged for seven years and three months, represent a celebration of the distillery's craftsmanship and innovation. The journey of the Cave Series is far from over. With more variations and experiments on the horizon, bourbon enthusiasts can look forward to a continuous exploration of flavor and tradition.

I had the opportunity to try Remus Highest Rye Bourbon during a recent whiskey-tasting session with my fellow whiskey enthusiasts, and I must say it was a pleasant surprise. Remus, previously known as MGP (MGP Ingredients), has been a mixed bag when it comes to their offerings. Some have been fantastic, while others have left us disappointed. This time, it seems they hit the mark.
Remus Highest Rye Bourbon

Appearance: The bourbon had a deep, inviting color that hinted at the promise of a flavorful experience. The label, with its charcoal background and copper accents, was a departure from the traditional Remus look, adding to its appeal.
Nose: The nose was a pleasant surprise, offering sweet and rich fruit notes, with a hint of maple. It reminded me of licorice and cherry candies. The sweet aroma was inviting, and it set a promising tone for what was to come.
Palate: Upon tasting, the Remus Highest Rye Bourbon did not disappoint. It offered a complex and robust flavor profile. The initial sip was like walking through an Iowa hayfield - earthy, rich, and filled with character. It was an intriguing combination of sweet candied fruits and a touch of cherry. The licorice notes from the nose came through in a delightful way, and I couldn't help but think of those small, purple chicory flowers. The mouthfeel was full and satisfying.
Finish: The finish was long and satisfying, with notes of spicy cinnamon and saddle leather lingering on the palate. It was a well-rounded and balanced experience that left me wanting more.
In summary, Remus Highest Rye Bourbon is a notable departure from some of Remus's previous offerings. The change in branding and label design seems to reflect a shift towards quality and character. While Remus has been hit or miss in the past, this particular release is a hit.
I recommend giving Remus Highest Rye Bourbon a try if you can find it, but be aware that it's somewhat limited in availability. It's a great addition to your whiskey collection, especially if you're a fan of bourbons with a higher rye content.

In a conversation that spanned decades and tasted like history itself, we had the privilege of sipping on a vintage Jim Beam whiskey bottled in 1976. This wasn't just a drink; it was a journey back in time, and here's our review:
Appearance (4/5): As we poured this aged elixir into our glasses, it revealed a slightly cloudy, hazy appearance, hinting at its decades-long slumber. While not perfectly clear, it carried a certain charm, like a faded photograph from the past.
Aroma (3.5/5): The nose on this vintage Jim Beam was intriguing. It bore the hallmark nuttiness that the brand is known for, immediately evoking images of Kentucky's oak-lined landscapes. There was also a slight hint of oak, which, considering its age, was not surprising. However, some of us detected a faint metallic note, which added an unexpected twist to the aroma.
Flavor (3/5): Taking the first sip, the taste was a mixed bag. The initial impression was of heavy oak, which can be attributed to the long years spent in the barrel. It felt like taking a bite of an oak tree. While some of us appreciated this bold oakiness, others found it a bit overpowering. The metallic aftertaste, however, was a divisive factor. It was akin to licking a piece of playground equipment on a sunny day, which wasn't necessarily pleasant.
Historical Significance (5/5): What truly set this whiskey apart was its historical significance. Bottled during America's Bicentennial year, it was a tangible piece of history. The fact that it had been aged for eight and a half years before being bottled in 1976 added a layer of complexity and intrigue. It was a living testament to the evolution of whiskey-making in America.
Overall Impression (3.5/5): In conclusion, this vintage Jim Beam was a unique experience. While it might not be everyone's cup of whiskey, its historical importance couldn't be denied. It felt like a snapshot of a bygone era, preserved in liquid form. The heavy oak and metallic notes might deter some, but for others, it was a glimpse into the past worth savoring.
This whiskey was a testament to the fact that every bottle carries a story, and in this case, it was a story of America's whiskey heritage. It wasn't perfect, but it was an unforgettable journey through time, one that we were grateful to have embarked upon.

We've been seeing this whiskey on our shelves in our area of Central Iowa for a little while now, so we got a bottle to try. We opened it up on set one night, and what you will hear is our opinions at the time of this juice.
J. Rieger & Co. is located in Kansas City which is not far from us, and like any small, or regional distillery, we certainly want to see them succeed.
"J. Rieger & Co. Kansas City Whiskey pays tribute to our historic brand through resurrecting the use of adding Sherry to American Whiskey, a common practice known as “rectification” in the late 1800s, but that was lost after Prohibition", says the company on their website.

Baker's Bourbon is named after Jim Beam's grand-nephew, and the bourbon named after him was once a small batch, but later Beam decided that the label would then be best served by being single barrel bottles.

When you are thinking light whiskey, you may think thin, with less flavor, or a product being pushed out the door in the name of profit. One sip of Obtainium Light Whiskey from Cat's Eye Distillery will most likely change your line of thinking.
The table recently had the chance to taste a barrel pick of Obtainium that was selected by Matt Porter of ADHD fame, and as the sticker on the bottle indicated, grape was the note that jumped out immediately.

Buffalo Trace has acquired a who's who of the bourbon industry, and E. H. Taylor is a giant among them. Considered one of the fathers of Bottled-In-Bond, who championed legislation that set a standard for purity in the bourbon industry.
Iggy brought in one of the latest bottles from E.H. Taylor that happened to also be bottled-in-bond.
From Buffalo Trace who now owns the E.H. Taylor brand, "Many of the barrels selected for the E.H. Taylor, Jr. Single Barrel are aged in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. Each barrel is hand-picked and Bottled in Bond at 100 proof to honor its namesake."

Ken had the opportunity to visit the Templeton Distillery in Iowa during the summer of 2022 and speak with their master distiller and management. It was a very educational visit.
The town is steeped in bootleg history, and Ken had a chance to visit a few of the places where the 'hooch' was hidden to be shipped off during the Prohibition Era.
Today's Templeton embraces their past, which includes some mistakes along the way, but they're growing and expanding, and sales of its well-known rye whiskey are growing steadily.
We sip some of their various rye whiskey offerings and try a couple of distillery-only bottles. BTW, did Ken say something about a bourbon?

Tasting the whiskey from a distillery that we've never had almost always makes us happy, and this Washington State bourbon is one that none of us have had in the past.
Their website makes this sound like a labor of love. "All of our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed, distilled, and barreled in our Woodinville® distillery, then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington’s extreme temperature cycles promote the extraction of natural flavors from the oak. Prior to being coopered, the barrel wood is seasoned in open air, rain, wind, sun, and snow for eighteen months, softening the wood’s harsh tannins."

Celebrity whiskey is everywhere today, with some success, and some, well not so much.
Our very own Michael was kind enough to share this bottle with us so we could give our opinions on this celebrity whiskey. Will we find it on par with his music?
Placing our already-aged 6-Year whiskey in an alligator charred, new American oak deepens the color and fills our whiskey with flavors of dark toasted vanilla. The finished product came out so smooth we increased the bottling proof to 100, says Heaven's Door on their website.

One of the newest Kentucky Distilleries to open their doors and many of their fans might say New Riff kicked the doors in.
Some of our own friends have had the opportunity to pick a barrel of their favorite New Riff juice, but unfortunately, that's not the one we're tasting today.
As with all single barrel selections, your mileage may vary, or in bourbon speak, each barrel has a taste character all its own.

This bottle got picked up in Oskaloosa, Kansas, on my way back to Oskaloosa, Iowa. One of our friends around the table is a big KU fan, and this whiskey created some fun times joking about that rivalry.
"This whiskey is made from grain grown on Boot Hill Distillery’s farm. This agricultural link dates back to 1863 when K-State was founded as the first land-grant university."

Many around our table have enjoyed Very Old Barton and praised it for it's taste, especially considering it's pricepoint being so affordable. We're going to sample the highest proof version and see if our love for this whiskey continues.
Very Old Barton is a Kentucky Straight Bourbon Whiskey produced in Bardstown, Kentucky, and aged 4 or 6 years by the Sazerac Company at its Barton Distillery.[1] It is bottled in 80-, 86-, 90- and 100-proof (US) expressions. The 100-proof expression was once age stated at 6 years and bottled-in-bond, but those designations have been progressively removed as they have moved to blending younger whiskey.

Pikesville Rye is something we don't always find so easy here in Iowa, and the Whisky Friends found one, and we opened it up at our table to give this Heaven Hill juice a taste.

Marksman Kentucky Straight Bourbon shouldn't have been a surprise to us, as it's made by Sazerac at their Glenmore Distillery in Owensboro, Kentucky.
This 80-proof is said to be aged 5 years, and the online reviews and fairly positive for this pricepoint. What will we think of this what might be considered a bottom-shelf whiskey? No matter what, I know we had fun. What can go wrong for under 25 bones?

Many of us started our whiskey journey by sneaking a sip of grandpa's Old No. 7 black-label bottle of Jack Daniels. The distiller has a long and storied history and a process that helps make their whiskey stand out.
From the Jack Daniels website describing the Jamaican Allspice, "it's only natural that we search the world to discover new and rare woods to complement its character. Tennessee Tasters' No. 6 is an exotic experiment that finished our Old No. 7 whiskey with Jamaican allspice wood. The result has a nose of fruit and smoke that melts into subtle, sweet tobacco and a taste that begins with dark spice and clove and lingers to finish long and bold."
They then describe the Twin Blend as "This is the secret behind Jack Daniel's 14E19 "Twin" Blend. We hand-selected 50 barrels of our Tennessee Whiskey and Tennessee Rye, all with a barrel entry date of May 19, 2014. So we are tasting wheated bourbon from the oldest distillery around, Buffalo Trace. These bottles are made available yearly after Passover.
This wheat recipe is produced in partnership with the Chicago Rabbinical Council (cRc), and is made with the same new make that goes into the W.L. Weller Bourbons.
The juice is then aged in specifically designated Kosher barrels to satisfy Passover rules.
"After aging for seven years, this Wheat Recipe Bourbon was bottled at 94 proof after ensuring the bottling lines were cleaned beforehand and that no contact was made with non-Kosher spirits.

We've had Cooper's Craft products in the past, but none of us remember their 100-proof Barrel Reserve edition, so we break the seal on a new bottle and give it our impressions.
From the distillery website, "Coopers' Craft Barrel Reserve is born from our one-of-a-kind, chiseled and charred American White Oak barrel. This expression is a bold and complex Kentucky bourbon bottled at 100 proof."
Coopers Craft has a special way of preparing their barrels to receive their new make. We'll find out if the taste shows their craftsmanship in creating this bourbon whiskey.

Our Scotch-drinking friend Henry brought a treat for us, an offering from Springbank Distillery, Hazelburn 9-year Barolo Cask.
From the distiller's website, "Our Hazelburn range takes its name from one of Campbeltown’s lost distilleries and was first produced at Springbank Distillery in 1997. We tear the plastic off and break the seal on a bottle of 1792 Bottled and Bond store pick, and give our impressions of this 100-proof, 4-year bottle.
According to the 1792 website, their tasting notes are, True to its heritage, the unmistakable spice of 1792 Bourbon is met with notes of charred oak and fresh mint. Subtle caramel apple tones are delicately balanced with the lingering essence of coffee and black pepper.

We love trying regional whiskey offerings, like the one from Watershed Distillery. These folks work hard to bring some of the most unique whiskey, bourbons, and other spirits to the market.
Watershed Distiller claims to have Ohio's number one bourbon, and do we agree with that assesment. Our very own Michael is a native of the Buckeye State, and he chimes in on this apple brandy-finished juice. They claim the notes of this bourbon include dark fruit and warm vanilla. The Japanese love American whiskey and have several labels like Blantons that they own. In this case, Beam Suntory owns this distillery. We like many of Beam's products, but will we like this offering from Japan?

On the table is a new barrel-proof bourbon from Larceny, their B521 offering.
We're going to try this wheated bourbon made by Heaven Hill which is named after John E. Fitzgerald, who as legend tells it, built his own distillery along the banks of the Kentucky River and was sold to exclusive customers. Later on, Stizel-Weller is said to have named one of their premium offerings Old Fitzgerald in honor of him.
Fitzgerald had a colorful history within the whiskey trade, especially since he was a bonded agent for the government.
Did we find this juice as smooth as some of the barrels named after him, "Fitzgerald Barrels." Eventually, he sold out to Pappy Van Winkle, and the rest is history, or is it just more bourbon lore?

I was in Nebraska on the way to Colorado, and as the evening set in, it was time to call it an evening. Before settling in, I needed to find a Nebraska distillate to sip for the evening and ran across Coopers Chase at a local box mart.
Did I mention I got attacked by a bat while in North Platte while sipping this whiskey? There might be some sort of animal attraction to this juice.
Coopers Chase describes their bourbon as, "Distilled, aged in charred oak barrels, and bottled in rural Nebraska, Cooper's Chase Bourbon brings a complex flavoring of vanilla and caramel."

We have a treat in our glass this evening, the 2017 version of George T. Stagg. Stagg was the individual who bought the then Old Fire Copper Distillery from the legendary E.H. Taylor. He renamed the distillery in 1904 to the George T. Stagg distillery and carried that name for the next 100 years. Buffalo Trace is now the guardian of his recipe and tradition.
Buffalo Trace describes it, "Uncut and unfiltered, this robust bourbon whiskey ages for nearly a decade and boasts the bold character that is reminiscent of the man himself."
This sample came courtesy of our very own "Doc" who's been enjoying bourbon since his mom put it in his baby formula.

We return to the table and sample a store pick from Starks, Old Elk Straight Wheat Whiskey. The Colorado distillery has been putting out some very noteworthy products as of late, and we got our hands on a store pick of this juice from them and picked by Starks.
According to the Old Elk website, they describe this juice, "A delicious and well-balanced wheated bourbon is something every whiskey lover should get their hands on. Ours is a chance for us to show you and the world what we’re capable of. By using our expertise in creating our delicious flagship bourbon, we tweaked our recipe and upped the wheat, and kept the corn at the minimum. Our wheated bourbon is a smooth and layered whiskey aged for a minimum of five years and consists of 51 percent corn, 45 percent wheat, and four percent malted barley.

In this episode, we revisit Ozark Distillery and taste a creation that certainly caught our attention.
The craftsmen at Ozark Distillery "took a barrel that had bourbon aged for 2 years and filled it with an imperial stout beer. That aged for 6 months. We then filled that barrel with the same bourbon distillate but of course, can't call it bourbon due to the used barrel. That aged for 50 months."
What came out of our bottle and into our glass was an amazing experience that shared the best of bourbon and a stout beer, and made us look forward to seeing what other great creations they have brewing in back.

I've spent over a decade reporting the news, seeing all the pain that our world can bring, while also seeing so many great moments as well.
The one thing I've noticed is that people are becoming so polar these days, and our ability as a society to hold conversations with each other have become tense, as we've begun to lose the ability to listen to our family, friends, neighbors, and strangers.
Conversation and the ability to see something from a different perspective have slowly been slipping away.
I noticed that the ability of food and drink many times help people find a common thread to conversation. Maybe we think the food is excellent, or the latest sample of whisky was not so good. Whether we agreed or not on those choices, the conversation could continue, and at times would turn to more, shall we say, sensitive topics.
Because there had been some common understanding, to begin with, individuals could have more patience with differing opinions.
So, after a decade of watching people become more polarized, I began to dive into the world of whiskey, especially Scotch and bourbon.
I like how individuals could hold a conversation, taste the whisky, find differences in the different smells, tastes, share a laugh, converse with each other, and walk away with a good feeling from the experience, and hopefully new friends.
I enjoyed that for myself, and I really enjoyed seeing people enjoy the company of others.
So, if you are here hoping to hear people get stupid on booze, you may want to try a different podcast.
But if you want to hear a group of people, Whisky Friends, share a glass, share our experience of that pour, and in the end, hopefully, keep that art of conversation alive.
Then I welcome you to join us, the Whisky Friends, as we explore our favorite subject, whiskey.
