Poultry consumption in the U.S. has increased over the past two decades, while red meat intake has declined. This is likely due to the perceived health risks from red meat. Poultry is considered a safe alternative. But there has been scant evidence in the medical literature on the health effects of poultry...until now.

This study points to a fascination solution to the puzzle of how foods high in cholesterol can raise risk of cardiovascular disease, without having a strong impact of serum levels of cholesterol.
