Notes: Our most complex creation. Batch number two is a new blend of stock aged for multiple years, even more time this time, in many types of barrels, utilizing a unique fermentation technique along the way, with multiple yeast strains and sugar additions.
All these years spent in so many different barrels has allowed the base beer to pick up so many unique nuances from the various spirits along the way, and the longer this beer ages – oxidation and the way it interplays with big beers like this comes more and more into focus.
Batch two features a really pleasant sweetness, with notes of chocolate covered raisins, caramel hard candies, molasses, fig, and tobacco.

Notes: In late-2019 / early-2020 we found time and space to fill additional barrels with Barleywine albeit with an uncertain path. We often treat our high-gravity, clean barrel program (while much smaller) like our mixed fermentation barrel program – filling oak with intention but without a singular outcome in mind. Instead, we prefer to let the barrels reveal their course in time. After a year, we identified four bourbon barrels from that previous winter that had character and complexity making them particularly well-suited for extended aging. At that time, we were taking receipt of a variety of specialty barrels from Europe and after having a chance to evaluate the lot, picked out a pair of beautiful 20-year Cognac puncheons to continue aging the blend. After another year, Requiem No. 1 was bottled in March 2022. (15.5%)

Notes: Late last year Goldfinger Brewing Company (Downers Grove, IL) debuted an exciting collaborative brewing project called American Zoigl. It started as a pair of beers made with our mutual lager buds Live Oak Brewing Company (Austin, TX) and continued on with the esteemed brewers Urban Chestnut Brewing Company (St. Louis, MO). The project has made its way to Salem, CT and this week we’re very proud to share our American Zoigl.
Following the established framework for the beer while bringing our own approach, we used a local heirloom corn variety (Wapsie Valley) in a cereal mash, barley from Valley Malt, whole leaf Crystal hops and American-grown Saaz hops. Marrying old and new world lager brewing methods, there’s a depth of flavor and character we just love in this beer – subtle corn sweetness, a mellow/rounded malt character and noble-like hops with a zippy, citrus side.
It’s a distinctly American reinterpretation of the Zoigl beers of the Oberpfalz region of Germany. Dating back to the Middle Ages, Zoigl beer is less of a specific style and more significantly, a set of traditions centered around communal brewing and drinking. Those traditions are carried on today in five towns where a central, community owned and operated brewery in each town produces wort for a handful of families to bring home to their cellars for fermentation, conditioning and eventually service. Notes: The great British ale was first brewed to commemorate the 50th anniversary of the MG car factory in Abingdon, Oxfordshire. It was even named after the factory’s old run around car which was often parked outside the paint shop. Spattered in paint, the car became known as the “Owld Speckl’d Un”. This recipe was dreamed up after two of our brewers, Jason Krasowski and Paul Cade, spent a night out on the town trying some of the best cocktails the city has to offer.
