Everyone knows that bourbon has to be aged in barrels for a specific amount of time but did you know you can rapidly increase the aging process by oh, I don't know, putting barrels on a shipping vessel? I didn't know it either but Jefferson's did and they created a series called "ocean" that has revolutionized the bourbon industry. The latest voyage went all over the world but the thing that makes this one unique is it's the first rye Jefferson's has made walk the plank, so to speak. Not every bourbon story is a banger. Sometimes a bourbon comes out of the barrel and it's just not quite right. That's what we thought about Smooth Ambler's Old Scout Bourbon to be honest. Then something peculiar happened ... we tried it again. The second time didn't feel like the first time in the slightest. The nose was different, the palette was different and dare I say the finish was nice!?! We supposed it could have been that we allowed the bourbon to breath a bit or we'd had some tongue altering beverage or food item before tasting it originally. Could be, we supposed.
