This is a podcast where we explore vegan, vegetarian, flex, and gluten-free diets to see why some of us are choosing to eat this way, and what we are eating in place of “typical” food items. This podcast will include some of my own personal journey with cutting out most meat items, as well as interviews with friends and family members who are eating gluten-free and vegan.

In this episode I sit down and chat with JD and Kindra - friends of mine who’ve moved toward “flex-vegan” diets. I wanted to chat with them about what pushed them towards this type of eating, their family’s reactions, and all of the ways in which they’ve been able to explore cooking since making the transition to a meatless diet.
In this episode I chat with my sister who has Celiac disease. She explains her diagnosis and how this type of diet is crucial to the health of people with Celiac disease, gluten intolerances, and gluten allergies. We also talk more on how to effectively shift to a gluten-free diet if you feel this is the right choice for you; but we want to remind listeners that this shouldn't be considered just a "fad" diet strategy.
In this episode I explain why I want to tell a bit about my interest in seeking out a meat-free diet, and why I typically cook and eat gluten-free as well. I also talk a little bit about the premise of "The Mediocre Kitchen" and what is to come in future episodes.
