This week's wine: Mumm Sparkling Brut Prestige
Winemaker Note:
The Brut Prestige grapes are harvested by hand during the crisp morning hours to ensure they arrive at the winery in pristine condition. Fermentation is conducted at cool temperatures, mainly in stainless steel tanks to preserve freshness and fruit intensity. A few selected lots are aged in French oak barrels to add depth, complexity and spiciness to the final blend. After initial fermentation, the art of the blending begins. Mumm's winemakers find the perfect blend of wines to create the signature taste. Then the finished blend is bottled for the second fermentation. An average of 18 months' yeast aging adds complexity, contributing subtle bread dough flavors and layers of creaminess. The wine is disgorged as a brut style and a dosage is added back to balance the wine's acidity. Brut Prestige then ages another 3 months on the cork to fully marry the dosage to the base wine.

This week's wine: MIRABELLE BRUT ROSÉ
Mirabelle is Schramsbergs multi-vintage brut sparkling wine. Twenty years into building an outstanding range of vintage dated sparkling wines, the Davies family set out to master the non-vintage or multi-vintage traditional method technique. A few years of experimentation would ultimately lead to the successful launch of Mirabelle Brut and Mirabelle Brut Rose in 1992. This wine is a specially crafted blend of Pinot Noir and Chardonnay from Schramsbergs select cool-climate vineyards in the Napa-Carneros, Sonoma Coast, Anderson Valley and Marin County areas of Californias North Coast. Starting in 2022, the Mirabelle packaging started to designate the bottling number to give specificity to each bottling of Mirabelle, and to highlight the vintage which is primarily in the blend. For this 31st bottling, the 2019 vintage makes up 78% of the blend, with the other 22% being from select base wines from previous vintages.
The grapes are picked by hand and gently pressed to provide superior quality juice for the production of this balanced, refreshing rosé bubbly. In the spring following the fall harvest, base wines are individually evaluated and carefully blended by our winemakers. Pinot Noir lots, including a few fermented with skin contact, provide brightness of berry fruit and body, while Chardonnay lots lend length and zest to the palate. Additional flavor depth and aromatic complexity results from the blending of base wine lots aged in barrels and tanks for one or more years. The wine undergoes secondary fermentation in the bottle and rests for approximately two years before its release. Following the en tirage aging, an extensive dosage trial process produces the ideal finishing touch, and the sparkling wine is ready to be enjoyed. The finished Brut Rosé exhibits fresh, elegant, and toasty aromas that lead into lively and delicious fruit flavors on the palate.
The multi-vintage Mirabelle Rosé is delicious on its own, and it also pairs well with everything from grilled salmon, BBQ pork ribs, poke tuna, classic Hawaiian pizza or simple pastas.

Winemaker Notes
Ruby in color, concentrated aromas of bramble fruit, mint, cedar and graphite emerge and lead to a silky palate featuring jammy notes of blackberry and cherry cobbler accented by dried herbs and minerality flavors. The firm, rustic tannins and lively acidity frame the ample palate and the finish extends far beyond the sip.
A combination of determination and extraordinary people has brought Willamette Valley Vineyards from a bold idea to one of the region's leading wineries, earning the title "One of America's Great Pinot Noir Producers," from Wine Enthusiast Magazine.
The “budwood” of Willamette Valley Vineyards began long before its founding in 1983 by vintner Jim Bernau. His Dad was hired by a California winemaker to secure the first winery license in Oregon since Prohibition. Jim’s Dad allowed him small tastes of Richard Sommer’s wine, lighting a path that led Jim from home winemaking to studies at UC Davis and eventually Beaune, France.
In 1983, Jim cleared away an old pioneer plum orchard in the Salem Hills and hand-watered his first plantings using 17 lengths of 75’ garden hose.
Jim's vision of organizing the support of wine enthusiasts to build a winery that would produce world-class wines through shared ownership has resulted in more than 16,000 owners. The winery's Common (WVVI) and Preferred (WVVIP) are traded on the NASDAQ.
The winery sources all of its barrel-aged Pinot Noir from its estate vineyards and practices environmentally sustainable farming. All of the vineyards have been certified sustainable through LIVE (Low Impact Viticulture and Enology) and Salmon-Safe programs since 1997.

This week's wine: Saint Cosme Little James’ Basket Press Blanc
Wine Description
Château de Saint Cosme is the leading estate of Gigondas and produces the benchmark wines of the appellation. The property has been in the hands of the Barruol family since 1490. Louis Barruol took over from his father in 1992 making a dramatic shift to quality and converting to biodynamics in 2010.
The estate lies in the heart of Gigondas where 15 hectares of vineyard grow in the shade of the Dentelles de Montmirail mountain. In addition to the estate-grown wines labeled “Château de Saint Cosme,” Louis Barruol buys grapes from contracted growers, labeling these “négociant” wines simply as “Saint Cosme.”
Saint Cosme Little James’ Basket Press Blanc is an unconventional blend of Sauvignon Blanc and Viognier. Viognier and Sauvignon Blanc are traditionally grown in different regions but Louis Barruol believes them to be complementary. The wine is vinified in stainless steel tanks.

Taylor Fladgate's Fine Ruby a blend of full bodied Port wines aged for around two years in large oak vats in Taylor Fladgate's cellars, or ‘lodges’, in Vila Nova de Gaia.
As they age, they gain smoothness and elegance while retaining their fruitiness, intensity and youthful ruby colour. They are then blended together for balance and consistency. With its firm tannins and concentrated fruitiness, Fine Ruby is perfect for the classic port-and-cheese combination.
It is particularly good with blue-veined and richly flavoured soft cheeses. It also pairs well with berry fruit and dark chocolate flavours and, like all red Ports, makes an excellent after dinner drink.

Stylish fruity nose, full of intense concentrated blackcurrant and cherry aromas. Full bodied and firm, the palate is crammed with luscious black fruit flavours.

This week we tried a delicious Pinot Noir. RouteStock is a wine that has a vibrant medium-light Burgundy color with effusive aromas of sweet red and black fruits (raspberry and blackberry), rosemary, and orange blossom. The flavors are both lithe and brooding at the same time with the same raspberries and blackberries from the aroma along with a beautiful richness of sauteed mushrooms, wild sage, and soy sauce. The wine is medium-bodied, full of rich Pinot Noir flavor with an exotically long finish.
