(Chinese Pancake Omelet)

Pancake Ingredients:

8 eggs

6 slices bacon, fried crispy

1 cup portabella mushrooms, course chopped

1/3 cup carrots, finely sliced

1/2 cup bean sprouts, snapped in half

3-4 green onions, finely sliced

1 Tbsp hoisin sauce

Gravy Ingredients:

1 cup of your favorite prepared brown gravy

1/2 Tbsp hoisin sauce

1 tsp soy sauce

Yields 12 pancakes

Banana Bread

1 stick of butter

1 cup sugar

2 eggs

1 cup mashed banana (about 2 medium sized)

1/4 cup milk (or honey vanilla Greek yogurt)

1 tsp vanilla

2 cups flour

1 tsp baking powder

1/2 tsp salt

Optional mix ins: 1/2 to 1 cup of mini chocolate chips or crushed walnuts or both!

Jalapeño Popper Wontons

8 oz cream cheese (or neufchâtel)

1 cup shredded mozzarella

1 cup shredded cheddar

2-3 oz bacon bits

2-3 diced jalapeños* (depending on how spicy you like it)

1 tbsp honey mustard

3 shakes Worcestershire sauce

Garlic salt (to taste)

Wonton wrappers

Vegetable oil (or cooking spray if air frying)

*I also recommend removing the seeds and ribs from the jalapeños prior to dicing them to decrease the spicy heat, unless you're into that sort of thing 😘

This makes between 40 and 50 wontons, depending on how full you stuff them. Great for parties or freeze uncooked wontons for later use!
