Not sure what Beehive Cheese see's in our podcast, but we are lucky to have them sponsor us! Britton Welsch is a GEM, and we are fortunate to have him on the show!

According to Britton's LinkedIn "Avid foodie, and farmer's market junkie. Beehive Cheese is my passion and gets me out of bed in the morning. I love telling stories, and making friends with cheese."

As the second generation of a family-owned company, Britton grew up at Beehive Cheese. He's watched his dad, and uncle build a creamery from scratch, using second hand equipment.

Laughably, Britton's dad and uncle only had 8 days of cheesemaking experience between the two of them. They took a giant leap and we’re still here 18 years later thriving. It was through this experience that Britton learned the values of hard work, trust, and being wise with resources.

At Beehive, Britton has always believed in supporting the community, treating employees with both compassion and respect, and having a good time making award-winning cheese.

Britton is so proud of Beehive's B-Corp certification. Most importantly, it gave Beehive a way to measure and assess the culture we’d already built from the ground up, and reveal blind spots. They did well on our audit, and learned that there is still more to be improved upon to truly use our business as a “force for good.”

As we see it, Britton has been living by a code, "As an artist of a consumable product, hands down the most rewarding aspect is making a product that brings people together to share joy." Which for that we couldn't be more proud to have them as a sponsor!

This year, we mark 50 years of Edward Abbey’s The Monkey Wrench Gang—a countercultural classic that helped ignite the radical environmental movement. First published in 1975, the novel introduced the world to Bonnie, Doc, Seldom Seen Smith, and Hayduke—and dared readers to imagine sabotage as sacred duty.

There’s no one better suited to lead this conversation than legendary bookseller and rare book expert Ken Sanders—a close friend of Abbey, a fierce defender of the desert, and a long-time voice in the literary and ecological worlds of the American West.

Through wine, words, and wide-open questions, we’ll explore Abbey’s complicated legacy and enduring impact. Expect sharp insights, spirited debate, and a space to reflect on radical environmentalism in an era of climate emergency.

Kim Bowsher and her family have a philosophy: “You can’t know where this yes is going to take you, but you say yes and it starts to line up.” She is currently Roosters Hospitality Group CEO, but she is much more than that. When she met with other Ogden business owners about local issues, she decided to do something about them. At 26 years old, she went to the mayor’s office to present a solution. That plan would eventually turn into the Ogden Downtown Alliance. Kim is a prominent figure in Ogden, Utah, known for her work with the Ogden Downtown Alliance and various other community organizations. She recently stepped down as Executive Director of the Ogden Downtown Alliance after nearly a decade of service, where she was instrumental in establishing the organization and driving its growth.

She was instrumental in establishing and growing the Farmers Market Ogden, which was named "Indie Ogden Best Project of the Year" and "Best Event". Besides her work with the Alliance, Bowsher has served on numerous community boards, including Visit Ogden, GOAL Foundation, Junior League of Ogden, and the Ogden Food Council. She also founded Ogden Young Professionals and served on the board of WomenMTB. She is currently. When Kim couldn’t find a company to work for that was busy with projects she was interested in, she started her own, kbENT. Which is a full scale marketing group.

Violet’s story begins at another Violet in a bygone time. About 20 years ago, Myra and Troy Petersen met while they were both working at a restaurant named Violet in Santa Monica, California. She was a bartender and he was a server. After their first daughter was born, the family moved to Utah, where the Petersen's became involved in the industry locally as well as in the Utah food scene.

Troy Petersen, who grew up with the Caputo family and is a friend of Matt Caputo and the late Tony Caputo, worked at Caputo’s Market and Deli downtown and also helped open Caputo’s at 15th and 15th in about 2006. The family bounced between Los Angeles and Utah for a while, but eventually Myra and Troy Petersen decided that they wanted to raise their children in Utah, so they moved back for the final time in about 2012. Once the Petersen's were ready to open their own Violet in Utah, they contacted the restaurant’s previous owner, got his blessing to reuse the name, and went for it.

Find some bubbly, bust it open, and join us in celebrating one of Salt Lake City's finest 'Ma and Pa' restaurants!

If you’ve google searched a menu for a restaurant in Utah, you likely can thank Stuart for the results! Stuart is the founder, writer and wrangler at Gastronomic SLC. He’s a multiple-award winning journalist and has written in myopic detail about the Salt Lake City dining scene for the better part of seventeen years. He’s worked extensively with multiple local publications from Visit Salt Lake to Salt Lake Magazine, and helping to consult on national TV.

Pause those credits, yep, that's Stuart! He’s also a former restaurant critic of more than five years, working for the Salt Lake Tribune. He appears largely fueled by a critical obsession with rice, alliteration and the use of big words I don't understand. What they're saying about Stuart: "Not inaccurate", "I thought he was older", "I don’t share his feelings". If you ever need to know where to eat, Gastronomic SLC is the ultimate resource! He started SLC Menu as somewhere to house all the hard-to-find menus he picked up during hid food writing travels. Through the archives you can find menus from the last fifteen years of the Salt Lake City dining scene.

From the X96 webpage, “Nick Davis is the ‘newest’ member of the X96 family. He was born and raised in Utah and is currently a student at the University of Utah. His passions include listening to music and going to concerts, so working for X96 is a perfect fit. He started out as an intern for the Radio From Hell show and wouldn’t leave the building.”

Nick is considered X96’s market tested bad boy, with a streak for taking photos with people in panda costumes. Is he considered tumultuous? No, instead, that’s his alter-ego Dick Navis.

Worrisome mustache mania continues to plague the mind of Nick, at least from my perspective. Residing in the SLC valley, he works hard for his dog biscuit, his wife, and hopes the construction stops soon so maybe he can get some sleep.

Mike Marron has been fermenting since he was 10 year old, and no. We don't mean he's been sitting in it. He's been gloriously intrigued by the process of fermenting grapes, and planted pinot noir grapes behind his childhood home in 1977 — which he still uses to make wine.

He has brought his professional intrigue of winemaking to La Caille in 2015. La Caille, the iconic restaurant which sits on 20 acres at the mouth of Cottonwood Canyon in Sandy, has found its stride with farm-to-table food and a re-established wine label.

Mike has been making wine from Salt Lake Valley Grapes since he was 19 years old, his expertise has brought Chateau La Caille to a new level of excellence. In 2012, La Caille re-opened under the ownership of Kevin Gates, who spent $1.5 million restoring the chateau and the grounds.

Today we speak with some of the founders of Beehive Distilling. Erik Ostling, and Chris Barlow. Beehive Distilling was started in 2013 by three friends who audaciously thought they could start a distillery in one of the most theocratic, alcohol adverse states in the country. With a little 80 gallon still and 1200 sq feet of production space in a run down warehouse, Beehive Distilling was born. They kicked off their journey with gin, infusing it with unique flavors and character. Soon, another gin joined the lineup, followed by a smooth vodka. With the draw of whiskey aging in barrels more space was needed so in 2017 they purchased a building—an expansive 10,000 square feet dedicated to distilling, barrel aging and their new endeavor canned cocktails. Now, eleven years after opening, Beehive has multiple offerings, and they can be found at bars that make excellent cocktails such as Bar-X, The Rest, and Copper Common, as well as on the menus of many excellent restaurants around the valley. Bill brought Deja Vu, Jimmy Splashes up your News, and Dawson hits the wrong buttons. Snag something Beehive Distilling as we joke along the way!

Most people have seen the wild memes about Brigham Young University - otherwise known as the school where students would rather drink a cup of boiling oil than a cold brew. The videos are wildly entertaining to watch, but there's a lot more to the story there at the university. It's a complicated conservative institution with a varied past, and has been historically highly oppressive to the LGBTQ+ community. As a result, the school made international news when a group of students lit up the school's iconic "Y Mountain" in rainbow colors in early 2020.

But, A Long Way From Heaven does a lot more than tell the story of the Rainbow Y. It outlines the history of queer treatment at BYU - the good (where it exists), the bad, and the very, very ugly. The film combines new, original footage with a huge variety of historical images, videos, newspaper articles, and other mixed media from every conceivable source to tell the story of BYU's queer students, and the bravery and risks they constantly take to make their voices heard.

We can all take away something from a film like this, thanks David! Join us, sip on a Gin, and start singing for another episode of The Let's Go Eat and Drink Show! Happy Pride Month!

Today we interview the Owners of Clear Water Distilling Co which is Utah's most innovative distillery, and possibly the most innovative out of the country. Matt has spent 20+ years traveling the world in search of the most unique tastes and distilling techniques. Stephanie is the President of the company who manages finances, and marketing.

"We feel that not being defined by a spirit category, makes for the best products because they are not constrained by the need to fit a particular category. It also gives us total freedom for creativity and results in a wonderful new pallet for bartenders and mixologists. This also results in spirits that may have never existed before and offers the consumer the chance to try something absolutely new. Riding horses in the Mountain West & hosting City Cast Salt Lake. Like any good mixologist, Ali Vallarta wanted to shake things up. “I found myself going to the same seven bars over and over. Like, every week, we’re back at the same places. There’s so much more to see and more people to meet.” It’s safe to say that’s no problem after her year-long adventure.

That’s because Vallarta — whose day job is hosting the City Cast Salt Lake City podcast — decided at the beginning of 2023 that she was going to do something a little crazy: grab a drink at every bar in Salt Lake County. She drank at 211 bars in all. The tour would be a bit of a logistical challenge. Sure, bars near her downtown Salt Lake City apartment would be relatively easy to pick off. But watering holes farther away required friendly designated drivers, geographic travel optimization, and, well, a lot of drinking.

We dive into Ali's bar bouncing adventure, and take a deeper dive into getting to know her through the lens of food, and drink. Bill brought his badgering of interviewing questions, Jimmy brought a luxurious Orange Wine, and Dawson hit the lights, started the camera, and put them into action.

Hello, friends! This week, we're reposting an episode from 2013 with one of our friends who's in need. Please see this note from Bill:

I had the great delight some time ago to meet a person called Princess Kennedy. It was for an interview for my podcast The Let's Go Eat Show. PK suggested we meet at Zest, a vegan restaurant that has since become a favorite spot. I found PK to be a charming guest, willing to talk about anything. She was funny, smart, sexy, and a delight to be with. And now it seems she has been brought low by a horrific accident.

Please get to know her, if you don't already, through this interview. Know this: PK has no insurance. She will need alot of care both in hospital and at home to recover. You can help. Just google Go Fund Me Princess Kennedy. There are a couple of people who have set up funds. Justin Strange seems to be the main one. Or you can use Venmo @PK-Kennedy.

Get better soon, Princess!
