What might the future hold for healthcare foodservice?
When you’ve seemingly done it all, you’re going to have some insightful thoughts on the future of the industry you’ve been a big part of for the past 35+ years.
Our host Mike Craig continues his conversation with Julie Jones, who spent 30+ years at The Ohio State University Wexner Medical Center, finishing as the Executive Director of Dining.
In addition to a range of forward looking questions, we also ask Julie to reflect on how she built such successful teams, how she balanced the short term and long term needs of her teams, and the three primary goals for her operation. Great insights for not just foodservice, but anyone who’s ever managed a team.
Grab some popcorn, and settle in, because this is another conversation you can’t afford to miss.

With 35+ years of experience in healthcare foodservice hospitality, we should have known one episode wouldn’t have been nearly enough for our conversation with Julie Jones.
Julie spent 30+ years at The Ohio State University Wexner Medical Center, finishing as the Executive Director of Dining, and has seemingly done it all. From running one of the largest room service programs in the country, to serving 4+ million meals annually, introducing plant forward concepts and technology ahead of their time, and leading rebuilds and rebrands, the list could go on. And lest we forget, she's also a 2015 IFMA Silver Plate winner.
Suffice it to say, host Mike Craig had no shortage of topics to discuss.
In part 1 of our conversation, Julie shares how she got her teams excited for change, where she looked for inspiration, the role of technology and innovation in foodservice, why operators should embrace technology, and even the one, err, two things you must try if you ever visit Ohio Stadium.
Would this episode help someone you know? Then share away!

Robin Safley talks with Mike Craig about Hurricane Ian, a Category 4 Atlantic hurricane that was the deadliest hurricane to strike the state of Florida since the 1935 Labor Day hurricane.
Robin earned a law degree from Florida State University, and she worked in private practices and politics before moving into consulting. She was then offered a position to help Florida’s school nutrition program transfer from the Department of Education to Agriculture, which eventually led her to become the Executive Director of Feeding Florida, a vast food bank system which aims to eliminate hunger in that state.

Nicole earned her MBA from Boise State University in 2019, but she joined its administrative team all the way back in 2005 as event manager. She worked her way up in the student affairs department before becoming Associate Vice President for Campus Services, where she oversees the Student Union building, University Event Services, Dining Services, and the university’s mascot-inspired Bronco Shops.
Host Mike Craig digs into Nicole’s recognized expertise, including how to create a culture of innovation, why it’s important to apply student degrees to campus and foodservice jobs, how to find a good foodservice partner, and more.

You’re familiar with retail foodservice, and institutional foodservice, but what about charitable foodservice? Robin Safley opened our eyes to this vital - but often overlooked - area of feeding those who need it.
Robin tells host Mike Craig all about why food banks are and do more than they seem, how her organization works with industries like healthcare and universities, and how operators at similar retail and institutional foodservice brands can start to work with food banks to help fight hunger.
Love what you heard? Please share so we can all do more good!

Interested in local farm-to-table solutions? Want to become more resilient against supply chain shortages? Then you should hear what Jenna Kaczmarski has to say.
Jenna began her career as a K-12 dietitian in Florida, where she helped feed around 100,000 students every year. After becoming Program Director of School Nutrition, Jenna believed she could do more to make her dream of farm-to-school come true, so she founded the non-profit Locally Grown to bring equitable, resilient food systems to Florida schools.
In this episode of Pass the Tots, Jenna tells host Mike Craig about why it's vital for children to know where their food comes from, why local food is key to building strong communities, and how operators can get started with their own farm-to-table programs, no matter their industry.
If you enjoyed what you heard, share the love by sharing around!

It’s an episode takeover from the Served by SHFM podcast!
**Michael Craig, Co-founder and Chief Customer Officer of Nutrislice, joins host Michael Moore.
How can you add value to long-term partnerships through impactful negotiation? Michael Craig discusses negotiation strategy, silos and opportunity for creative collaboration.**
One of the biggest treasure troves of information on food data and menu transparency is Lisa Eberhart, Director of Nutrition and Co-Founder of Menu Analytics.
Lisa's successful history in the foodservice industry started when she was a dietitian at a cardiac rehab center, and eventually she became a consultant and then employee for the dining program at North Carolina State University. She was the trailblazer who advocated for and launched the university's menu transparency efforts, by cataloguing all its food data before the internet was really a thing. Her efforts led to a reduction in overhead and food waste, and grew student participation and trust in the dining program.
Lisa shares these stories of her journey and more with host Mike Craig in this episode of Pass of the Tots, including how she and co-founder Randy Lait launched Menu Analytics just as the Covid-19 pandemic started.

Digital food labels are ready to make a big impact in the foodservice industry. How will YOU use them in your operation?
Nutrislice recently introduced its new digital label solution called Spotlight, which helps operators tell the story of their food right at the point of guest consideration. The labels ultimately make operators' lives easier because they remove the time and tedium of paper labels, as well as making operations more sustainable by reducing waste.
Co-Founders Brain Crapo and Mike Craig talk to our sometimes-host Patricia DeBough all about Spotlight, why they wanted to bring it to the market, and why it's one of the best decisions operators can make for their teams.

Dietitians play a vital role in the C&U foodservice industry, as Agnes Sherman from the University of Wisconsin-Madison can easily tell you.
As part of the Dining and Culinary Services team of UWM's Housing department, Agnes helps feed about 9000 students three times a day during the college semesters. She focuses not just on nutrition, though, but also food safety and allergen safety across UWM's entire foodservice operations and student body.
Agnes talks to host Mike Craig in this episode of Pass the Tots about how her team tackles food insecurity, how operational efficiency drives innovation, and how to offer value to and build trust with students.
Please share with fellow dietitians/operators!

Just how important is menu transparency, really?
Tyler Scheviak would argue it's critically important to many of the guests you serve who rely on accurate, clear menus so they can make safe dining choices for their dietary and allergy needs.
And Tyler would know. Having had food sensitivities since he was 10, he's the Co-Founder and Growth Lead at Fig, a food scanner and discovery app for people with food allergies, diets, and avoidances.
In this episode of Pass the Tots, Tyler tells host Mike Craig all about:
Enjoy!
