Three Food Memories is hosted by Savva Savas, dad of twin boys, entrepreneur, caterer, and creator. In each episode Savva chats with a guest who shares three food memories and a social cause close to their heart, revealing far more about themselves than what they’ve tasted.
The things you find out when you ask people about their food memories can be soulful, spicy, sensational, sour, and often sublime. Often you'll discover something you never knew about the person you asked - and this is what the Three Food Memories podcast is about. How every food memory is linked to a moment in time.

Journalist and author Antoun Issa's new book Rebirth: A Love Story From the Depths of War has just been released. The book is about his mother's experiences of her time in Beirut in 1974 during the Lebanese Civil War and her migration to Australia.

A little while ago Savva interviewed Ita Buttrose for his 50th birthday. During the conversation, an amazing woman called Beryl Lane came down to chat with her idol, Ita. Beryl had travelled all the way from Macksville to see the chat, and meeting Ita was the icing on the cake.

"I didn't appreciate how strong the pull for human connection would be." - Corinne Ooms
In this episode of Three Food Memories, you’ll meet a forager, food scientist, and the longest‑lasting female contestant on Alone Australia, who endured 70 days in the Tasmanian wilderness before tapping out.
We should mention - she didn’t tap out because she’d run out of food, or her shelter had blown away…it was for another, far more important reason.
On the menu is: the wallaby and fern soup that got her through 70 days in the wilderness, Scottish potato scones, and Filipino pancit, along with musings on foraging, life, losing a parent, and becoming a parent for the first time.
Corinne's social cause is food waste and food security, because working in the food industry, she sees firsthand how much perfectly good food gets thrown out every day from farms, factories, retailers, hospitality, all the way to households! Corinne believes it is heartbreaking and there needs to be more consumer awareness and policy changes in regards to this issue.

Medical Aid for Palestinians is warning of a deepening malnutrition emergency in Gaza. 44% of pregnant and breastfeeding mothers screened by one of its local partners are suffering from severe malnutrition and urgently need to be referred for medical treatment.
This alarming data was reported by Ard El Insan (AEI), a longstanding local humanitarian partner of MAP, which has been delivering nutrition and medical support to Palestinians across Gaza. Until last week, AEI operated a medical point in Deir al-Balah, central Gaza, which provided essential care and nutrition services to around 200 malnourished women and children every day. But following forced displacement orders issued by the Israeli military on Sunday 20 July, the medical point was forced to shut down.
Despite the massive disruption caused by the forced displacement orders and the ongoing siege, MAP continues to operate in Gaza – though our ability to deliver services is becoming increasingly difficult and dangerous. We are still trying to operate eight other nutrition medical points across southern Gaza.

Fabio Mancini was born in Germany to an Italian father and an Indian mother. On his way to work, barely getting by as a shop assistant, he was stopped and abruptly asked "Have you ever thought about being a model?".

He’s owned and cooked at Shakahari in Melbourne and Tatlers Cafe in Sydney, presented The Food Lover’s Guide to Australia, and guested on Anthony Bourdain’s No Reservations where he told Mr Bourdain that he was scared of him because of his frequent dropping of the F-word.

“Because you've come from an institution where you're meant to put yourself last, to ask for help is seen as a bit of a failure”
In this episode you’ll meet Special Forces Veteran Heston Russell.
Heston grew up in suburban Brisbane as the middle child, with a Dad who was in the army, and an aerobics instructor mum.
Like his Dad, he joined the army too - but when he was a kid, he loved heading to work with his mum at the aerobics classes she taught. Food in the household was healthy and nutritious, chocolate and sweets were never to be seen.
This of course led him on a path the the corner store where he’d devour killer pythons and frogs. But life since high school hasn’t been all sweetness and lollipops. In fact, it's been far from.
During his time in the army, Heston served four combat operational deployments to Afghanistan and the Middle East, multiple counter-terrorism operations, a year in the US Special Ops command, and much more. Last year he won a defamation case against the ABC linking him to war-crimes in Afghanistan.
Hear Heston talk about the challenges he and other veterans face once leaving the armed forces, how it took him until almost 30 to finally realise who he was as a person, and how he feels more accepted in America as a veteran than back home here in Australia.
These days Heston invests his time in Veteran causes and the Veteran Games, an opportunity for Australian Veterans to showcase physical resilience, teamwork, and problem-solving in competition. You can find out more about the games at veterangames.com.

In this episode you meet Australia’s first ever astronaut.
Katherine Bennell-Pegg grew up looking at the stars in her suburban Sydney backyard, and by early high school when asked by a teacher to write down three professions she’d like to pursue as an adult she wrote just one.
Unlike those of us who still don’t know what we want to be, she set her sights on the stars and achieved what few dare to dream.

Recorded at The Neilson auditorium at the Australian Chamber Orchestra for Savva’s 50th birthday party, Ita shares incredible insights from her trail-blazing eight decades.
We start the food journey at Watson’s Bay with her father as a child, voyage through the Rockies on the glass roofed Rocky Mountaineer with her husband Alisdair, and find out the cheesy secrets behind a $3000 chicken dish in Townsville, which she also passes forward to our next guest, Australian astronaut Katherine Bennell-Pegg.
Along the way we hear from special guest Beryl Lane, a life-long Ita-ite who travelled to Sydney especially for the event, and who shared why Ita was so important to women in regional Australia.
Ita is an ambassador for the Bobby Goldsmith Foundation, which is Australia's oldest HIV charity and provides support to anyone having difficulty living with HIV, physically, emotionally, or financially.

For comedian Geraldine Hickey, meal times were very Aussie. Dinners were spent sitting in a line with her five siblings along a long kitchen bench, with Mum on a stepping stool on the other side. The meals were simple fare, meat and three veg and spaghetti bolognese made with canned tomato soup and onion soup mix. And although they might have been plain, they were delicious. Almost as delicious as the dim sims from the truck stops where she stopped while keeping her truck driver Dad company on interstate trips.

You may not know his name, but you’ll most certainly recognise his style.
Robert Risko’s artistic journey started at age 10, when he entered a drawing competition at a local department store. His easter bunny winning him first place, and a shiny new bicycle.
Since that defining moment, he’s gone on to grace the pages of Rolling Stone, The New Yorker, and Vanity Fair, where he caricatured the most famous of celebrities for more than four decades.
Known for his retro style, his iconic cartoons blend humor and sharp observation with paper-cut wit, as does this conversation with Savva where he reflects on his journey, life in 80s New York, and how no steak was safe in his mother’s kitchen. He also has an uncanny premonition about the upcoming US presidential election.

Mohsin Zaidi is the author of the prize-winning coming-of-age memoir, A Dutiful Boy.
Growing up in a religious household in a poor suburb of London, as a teenager Mohsin had a life-changing moment: watching two men kiss on TV.
This screen snog set the stage for Mohsin to see himself for who he was. These days we find Mohsin content and happy at the table of his life, but the struggle between now and said kiss was real.
Now, living in New York with his husband, Mohsin chats with Savva about all things food, faith, and family, and how sometimes one can be used against the other.

A childhood jet setter, Yasmine is a human visual-verbal of her heritage (for those not in the art space, read: mood board). The child of an Australian mother and Egyptian father, her formative years were spent living between Kuwait, Saudi Arabia, and Sydney.
Tonight she shares food memories from Kenya and Egypt, as well as a myriad of striking and colourful stories from her life, throwing as much boldness, texture, and warmth to her audience as she does her designs (oh, and a little swearing too - a warning if you’ve got littlies or people not partial to cussing around).

Welcome to the very first ever, TFM art art-show…
This episode was recorded at Saint Cloche Gallery in Paddington thanks to the wonderful Kitty Clark, where artists Evi O, Toni Clarke, and Daimon Downey shared their art alongside their food memories in front of a live audience.
Oxtail Ragu, Rocket Pasta, and Rice Pudding were on the menu, as were plenty of laughs and insights into the minds and workings of Evi, Toni and Daimon.

Bianka Ismailovski is a force to be reckoned with. At the age of 34 she’s got the introspection of a 74 year old. But don’t let that put you off…or the fact that she’s been sober for 5 years either.
Bianka’s newly discovered independence after divorcing at the age of 30 came with a free set of steak knives - in the form of a self-awakening; about body image, sexuality, and uncovering pleasure. All alongside finding the funny side of life as a stand-up comedian.
Her food memories take us to Croatia where she spent final moments with her Dad at the age of 9 - to Wedge Island in WA and dancing around the kitchen as a teenager eating pasta snacks with her best friend.

Daniel Principe is a youth advocate and consent educator. Daniel has spoken to more than 55,000 students at more than 250 schools around Australia about creating spaces to champion boys into becoming good men.
The saying “boys will be boys”, can be traced back to ancient Roman times. Essentially society has been saying some form of this for at least 2,500 years. This dated idiom is working against us.
Yet, we still hear it. We hear it at the same time as we see the number of women being killed by a current or former intimate partner increase.
So how do we stop the violence? For Daniel, the answer is simple. Start young…take our boys on journies of self-discovery and show them the benefits of being decent, safe, respectful, courageous, empathetic, kind - to think of other than self.
Daniel’s social cause is an end to the exploitation and abuse of children.
He’s also an ambassador for Consent can’t wait.

There’s a bit of Ken Done iconography in every Australian home, if not our psyche.
In this episode of Three Food Memories, Savva sits with Ken at his gallery in The Rocks, at a paint-spattered and well-worn wooden table, Ken’s hands reflecting the same aesthetic.
Lobster, treacle sandwiches, and a surprisingly chewy green jelly are on the menu - as are his reflections on childhood by the Clarence River and six-year-old hysterics at a floating latrine during a flood.
UNICEF **is Ken’s social cause. He spent over 35 years as the Australian National Ambassador, campaigning for the rights of children around the world.

Tim Ross is a man of many talents - one of which is talking, but his love for mid-century modern architecture has taken pride of place since his former life as one half of the legendary radio duo Merrick and Rosso. Like a modern-day indoorsy Paul Hogan, there’s something about Tim Ross’s Australian sensibilities that we connect to. He makes us feel Australian without the Southern Cross tattoo.
Tim is the recipient of the National Trust Heritage Award for Advocacy regarding Australia’s legacy of modernist architecture; of an Australian Institute of Architects National President’s Prize for activism and outstanding contribution to the profession; was a National Architecture Awards jury member and is an honorary Institute member.
His three food memories are a hit of 80s nostalgia with the bonus of pineapple (of course) and revolve around memories of the food his mum cooked when he was a teenager. Tim's memories are full of surprising and incredible stories about his parents - his mum was a GP and his dad a pharmacist (and lunchtime nudist).
Tim’s social cause is the Aboriginal Legal Services NSW / ACT. He says it’s an inconvenient truth to find out what we learned in school wasn’t the full history of our country and it’s going to take us a long time to understand the landscape in the way that we should. We have to listen to Indigenous Australians.

For more than twenty-five years, Pia Miranda has been a household name, gracing screens big and small with her talent. From her iconic role in Looking for Alibrandi, she’s also won Survivor, sung in a mask, danced with the stars, had two children with a husband she adores, and released her memoir Finding My Bella Vita.

Recorded at the Australian Chamber Orchestra’s Studio at Walsh Bay on February 22nd, Savva sat down with the one and only Nat’s What I Reckon - the young, male, tatted, pierced version of Stephanie Alexander, who has changed the eating habits of a generation.
As Nat shared his three food memories; quarantine sauce, lasagna, and a Sustagen popper - delicious versions of the memories were served to the audience, so please excuse the sounds of cutlery and drooling in the background.

He’s been a taxi driver, a hippie (his description), a steel worker and a roadie for rock and roll bands, but it’s his knack for making science and the wonderous world we live in seem accessible and exciting that has set Dr Karl apart.
Today an author of 47 books (yes, you read that right), Dr Karl grew up in Wollongong, NSW, the only child of Polish immigrants, with a huge garden that grew potatoes and had a chicken coup.
His food memories connect to both the family he grew up in (he’s a lover of pierogi, or polish dumplings) and the family he has had. But there's also a throwback to the eight years he spent eating on the cheap while living in a squat in Sydney’s inner city suburb of Glebe – think 20 kilogram bags of rice, soy beans and a lot of vegetables.
Dr Karl cares deeply about education. He's a vocal critic of the privatisation of education and the federal government's subsidies to private schools. Every Wednesday, he hosts a Q&A with a public school and has sent more than four tons of books and New Scientist magazines to public schools around Australia.
It started as a nickname - 'Fruit Nerd' - given to him by his friends, but his love of fresh fruit made sure it would stick. The son of a fruiterer, Thanh Truong is now a produce expert and a big believer that eating with our eyes is a mistake.
Thanh reckons "food is an adventure" and he's committed to getting people to, quite simply, eat more produce. Which seems like an easy enough sell...until you hear that one of his favourite fruits is the very controversial Durian. Deborah Frances-White joins host Savva Savas to talk about the fun side of feminism, her passion for the perfect pizza, and the cause that is dear to her heart.
Deborah Frances-White’s podcast – The Guilty Feminist – has 90 million downloads and a fan base – celebrites and lesser mortals - that just keeps on growing.
The Oxford scholar has cut a career in stand-up comedy, writing, public speaking and podcasting. She has been described by The Guardian newspaper as, “Hilarious, irreverent, eternally surprising, classy as hell, genius.” So it’s been quite a journey for a girl from suburban Brisbane.
Deborah’s husband, Tom Salinsky, who produces the podcast, is the one who takes centre stage in the family kitchen. Choose Love is a global organisation that does whatever it can to provide essential support for refugees and displaced people. It provides everything from lifesaving search and rescue boats to food and legal advice – and Deborah, who is set to tour Australia and New Zealand in July – hopes you will support it, too.
The truly fabulous diva Jessie Ware joins host Savva Savas to talk about her life, music and, of course, fabulous food!
London has spawned a cornucopia of talent and another on its legendary list is Jessie Ware, the singer, songwriter and award-winning podcaster, whose slices of life delight millions of admirers.
Her deep love of family and sense of connection emanate from her Jewish roots – and that background supplies an extensive menu of physical and emotional nourishment. Like the bowls of ice-cream topped with cream her mother would tempt her with if she was upset as a child. Daniel and Luke Mancuso join host Savva Savas to talk about the three women who have made them who they are today, their food memories and “Yiayia” – the Greek neighbour who shone light at a time of unfathomable darkness.
When domestic violence took the life of their mother, Theresa, the lives of Daniel and Luke Mancuso were left in turmoil. But their Greek neighbour, Nina, known as Yiayia (meaning Grandmother), helped ease the agony with an abundance of love and comforting home-cooked meals. The boys’ relationship with Yiayia grew as they shared meals, memories and hope for a brighter future.
Daniel and Luke have three women who have influenced their lives and inspired them to always be empathetic and deliver acts of kindness. They are grateful to them, too, for the food memories they gave and continue to give. Their mother, a devoted and unselfish woman, whose delicious rack of lamb with jam and lunchbox treats brought joy. Their mother’s mother, Nonna Rosa – the strongest woman they know – who makes pizzas from scratch, epic crowd-pleasing lasagnes – and even her own salamis. And, of course, the unforgettable Yiayia, whose “plates of glory” became a social media sensation when the brothers set up an Instagram page displaying her delicious acts of kindness.
Now Daniel and Luke have launched Yiayia Next Door, a social enterprise aimed at encouraging people to “love thy neighbour” just as Yiayia did, and to inspire people to create safe communities and put an end to domestic violence.
But that’s not all. With Yiayia, they have compiled a book of her much-loved recipes, a full menu of food from the heart and soul.

Her humour and astute observation on all it is to be human is legendary. The celebrated author and commentator has lived her life in the spotlight since the age of 17, when she co-wrote Puberty Blues – the iconic Australian novel about teenage angst in the 1970s surf scene.

As the mother of an autistic child, her social impact organisation is the National Autistic Society in the UK.
