Today’s monologue was delivered in one take with no script.
These are my raw, visceral thoughts on the matter.
I was feeling a bit emotional when making this, but make no mistake: I would still love to be involved in media, content creation, and food.
I just need to take a step back and reconsider where I’m going and what I want.
Thank you for listening and I promise this won’t be the last time you hear from me.
Stay tuned next week for the final interview with Ann Kim.
After that? Who knows.
But I’m excited.
– Matt

Can a croissant change your life? Yes. Yes, it can. Don’t believe me? Ask these two women: Alexandra Motz and Diane Moua, renowned pastry chefs in the Twin Cities hospitality scene.
Their recent promotions within Gavin Kaysen’s hospitality company, Soigne, sent a clear signal to everyone who works in food: women are coming for leadership roles. Motz was granted pastry lead at Spoon & Stable and Diane Moua has been tasked with growing the up-and-coming Bellecour Bakery brand.

In this episode, I spoke with Kate Sidoti, co-owner of BRIM: a health-conscious restaurant in Minneapolis that dishes out bowls, sandwiches, and more. For Kate and her team, the pandemic was a close call. There were some days where she thought that everything was over.
But, with persistence and a passionate customer base, she made it through. We talked about that process and, also, how the events of 2020 have brought about new perspectives in the world around us.
You can order from BRIM here.

I had the honor of sharing a space with local food entrepreneur Liza Atkinson for this episode. She had JUST started her Minneapolis-based dinner party/meal service company, Nosh & Gather, when the pandemic hit. So how has she pivoted?
In this discussion, we talk about how the idea of a "career" has fundamentally changed with the newest generation of workers and how she managed to not go insane with her three kids (and husband) during quarantine. She also shares the incredible story of how her business – it's literally just her – has evolved during the past year.

It's an unfortunate reality that many people refuse to listen to their inner voice and dedicate their lives to a career or craft that they have no particular interest in. This was almost the case for Jo Seddon: she spent most of her life in the United Kingdom, working her way through the ranks of medical school and into physician life. This high-paying job of much esteem looked good on paper but, within, Jo was distraught. She was meant to follow a different calling: food.
And thus began her journey across a landscape of different culinary adventures. It's a long story, so I'll let Jo tell it. We spoke about her philosophy on food, how she has dealt with COVID-19, and much more.
Jo is now a private, independent chef and you can order from her site here.
Have any questions? You can get in touch with her here.

Tracy Singleton (owner of Birchwood Cafe) and Gary Wertish (president of the Minnesota Farmers Union) have been faced with an especially large challenge this year. These two have a famous collaboration at the annual Minnesota State Fair, but with the fair gone, they lost what was normally a huge revenue stream for both organizations. So… now what? Well, these are the type of people that think on their feet, so they prepared a pop-up installation (called F + B) in downtown Minneapolis’ Mill District as a way to keep serving out fair favorites while still deriving some sort of profit from the situation.
However, despite this whole ordeal, I wanted to talk to them about a singular topic that I’ve been trying to wrap my head around this whole pandemic: How has the relationship between farmers and restaurants been affected?
If you’d like to support F + B and Birchwood Cafe during these difficult times, I’m going to copy and paste the instructions from their website below. If you’re nearby and have the money to do so, please support them!
For downtown F+B Pop Up hours, menu + ordering CLICK HERE
"When you arrive you can either call us at 612.436.8877 and we’ll bring your order out to you, or you can enter the building, shop our Grab + Go market and pick up your order at the counter. Masks are required."
For Birchwood Cafe hours, menu and ordering CLICK HERE
"When you arrive for curbside pickup please do not enter the cafe. Give us a call from your car at 612.722.4474, pop your trunk and we will bring your order out to you! If you are walking or biking, please wear a mask while you wait, and observe social distancing with our employees + other guests."

Jared Brewington has had quite the year. Not only did he have to shut down a restaurant but his very identity as a black man became under attack, once again, during one of the biggest race movements of all time. Thankfully, he’s had a chance to escape all the noise under the trees at his farmland in Cologne, MN.
I drove 45 minutes west from St. Paul to visit Jared, a good friend of mine, to talk about how he has been processing this year and what’s coming next.
As of right now, Jared has no physical restaurant that you can support. However, he is in the process of reviving some old concepts (Funky Grits, Thigh Times Birdhouse) and starting a new one (family restaurant in Cologne).

Facundo Javier Defraia runs Boludo: a tiny pizza and empanada shop in South Minneapolis. Growing up in Argentina, he always dreamed of running his own place and being a true maestro of the kitchen. Well, his dreams came true, and now he's trying to expand his Argentinian street food concept to multiple stores.
But the pandemic got in the way of that. So how is he doing right now? Let's find out.
Want to support Boludo? Visit this link to find out everything you need to know, including hours and ordering details: https://www.boludoempanadas.com/contacto
Keep in mind that demand is very high. Not only are wait times long, but Facundo has stated that online ordering is not active during the weekends.
As stated in the intro, shoot me an email if you have recommendations for guests! I have a lot of exciting people in the works, but I am always looking for suggestions. It can be anyone in the food & drink industry who has an important story to tell in the context of COVID-19 and they can be from anywhere in the state, nation, or world!

Abdirahman Kahin emigrated from Djibouti, Africa in 1996. He came to Minnesota in 1997 and, initially pursued a career in multimedia. But after stumbling across a unique opportunity to run a coffee shop in the late 2000s, he realized how much he loved serving his community. Noticing a significant African food desert in the Twin Cities dining scene, he opened Afro Deli in 2010 to share the flavors of his homeland.
COVID-19 has been tough on Kahin but his work ethic and positive attitude remain unmoved. We talked about how he's been processing things this year and what's to come for him and his business.

Since starting the podcast, there is one population in the food industry that I've neglected: farmers. How are they doing? The answer to this question is complex and long-winded – not all farmers are managing in the same way, so I began with Ben Wiedenman from Pink Teepee Farms in Ottawa, Wisconsin.

If you want to support Ben, the best thing you can do is visit his online natural foods store – Sourced in Nature – and purchase a few products: https://www.sinfoods.com/

Yes, you read that right. Prince, an avowed vegan, loved cheesecake. Be he only loved it when it was made by one person: Vanessa Drews.
This connection between her and Prince not only provided the conceptual framework for her cheesecake business (he literally named it: "Cheesecake Funk") but it also created an unforgettable story. We talk about how Prince came into the picture, how COVID-19 has affected her business, and how she perceived the George Floyd tragedy as a single, black mother.
Want to support Vanessa and Cheesecake Funk? Visit their website and place an order! https://www.cheesecakefunk.com/shop It's probably best If you're in Minnesota though. Here's the disclaimer included with each item: *You will receive an email confirmation stating your order is complete and ready for Pick-Up with instructions. Your cheesecake order can be picked up 4 business days after your order has been processed and completed.
Daily order cutoff time is 4 pm CST. If your order was placed after this time, the order will be processed on the next business day. Business days are Monday - Friday.

The story of Dylan Alverson, his restaurant, and their efforts to serve a community in need.
Alverson owns Modern Times – a hip and popular cafe spot in Minneapolis – six blocks north of where George Floyd was murdered. I spoke with him on how he has been managing during this incredibly tough year and the efforts he has taken to help his struggling neighbors.
Modern Times is closed for the month of July. For updates, follow their online presence.

As the proprietor of a black-owned business, many people are asking Chef Gerard Klass how they can support him and his peers. Well, there are more ways than you might think.
Klass owns Soul Bowl, which is a soul food restaurant at the Graze food hall in Minneapolis. The operation started out as a pop-up but slowly grew into an operation that needed a home.
Although the restaurant has bounced back from the COVID-19 sales hit, their souls were hurt by the George Floyd tragedy. Soul Bowl employs an all-black staff. Klass is the father of a black son. We talk about a lot here, but for the most part, Klass shares the feelings that he and his staff have grappled with since that fateful day on May 25th, 2020.

A problem that has faced decades of neglect in Minnesota is now getting the spotlight following the COVID-19 pandemic and civil unrest: homelessness.
This issue has faced great scrutiny as Powderhorn Park in Minneapolis has become a sanctuary for those experiencing homeless. Since the shutdown of an unofficial hotel shelter nearby, hundreds have flocked into this area, forming a tent encampment. But this encampment is now under threat as the Minneapolis Parks and Recreation Board have continuously made moves to shut it down.
In the meantime, volunteers have shown up in droves to help individuals staying at the park. But the question remains: How are these people getting fed? I answered that question in today's episode of the podcast.

I decided to go back into the archives for this one. This interview was recorded back in April but remains relevant as restaurateurs continue to struggle.
I spoke with John Kraus: a local and global legend in the world of pastries. Not only does he run some of the best bakeries in the Twin Cities (Patisserie 46 & Rose Street Patisserie) but he's also one of 100 bakers in a global fraternity called Relais Desserts.
Kraus spoke to me about what it's been like to operate at a distance for a community he so dearly loves.
//
The best way to support John and his business at this time is to visit this link https://squareup.com/store/Pat46 and order something. Here are the details listed on the page:

Whether you agree with it or not, restaurants are beginning to reopen their indoor spaces. What does this process look like? How are restaurant owners managing this difficult move? I visited Fhima’s Minneapolis and spoke with restaurateur David Fhima – two days before he reopened his indoor space – to get a better understanding of how hospitality folk are operating in the age of coronavirus.

Thanks for sticking around, folks. It's been a challenging two weeks for us all.
I'm happy to have Tim Niver with me: a local legend around these parts. This prolific restaurateur made a name for himself with Town Talk Diner in 2006 and then Strip Club Meat and Fish in 2008.
He really hit a stride in the mid-2010s with St. Dinette (St. Paul) and Mucci's (St. Paul). The former became known for their phenomenal burger and the latter gained a reputation for their homestyle Italian food. He eventually opened a second Mucci's location in Minneapolis.
Today, all three of these locations continue their operations but the pandemic has put significant strain on Tim and his staff. He spoke to me about taking a break, how he's feeling, and what we can do to help restaurants right now (other than eating there).

Today we have Jon Wipfli, who runs Animales Barbecue Co: a food truck spot that's responsible for elevating the BBQ scene in the state of Minnesota. Located outside of the Able Seedhouse and Brewery in Northeast Minneapolis, Jon and his team churn out some of the best brisket, ribs, hot links, and pork belly in town.
The COVID-19 crisis has pushed Jon into a new business model that operates entirely online. We spoke about the intense struggles he endured in the beginning, the phenomenal response and resiliency of the local community, and our shared love of beans.

I am thrilled to have Xiaoteng "X" Huang with me today.
He’s the managing partner of PinkU, a fast-casual Japanese street food restaurant in northeast Minneapolis. They have another location in the MSP airport, but this one is temporarily shuttered.
X graduated in the top 2% of his class at Cornell University and from there, he saw his destiny before him: get a good job at a bank or Fortune 500 company and call it good.
And, initially, that’s what happened. After the university, X went on to work for Goldman Sachs, Citigroup, and Target. But there was something missing.
This search for purpose brought him to the restaurant industry, which led to the creation of PinkU.
The COVID-19 crisis is proving to be the most challenging event in X's professional life, but he is managing to turn it into an opportunity for growth. So how's PinkU doing during this time? What is X doing differently to adapt? Listen in and get the full story!

If you're picking up your food, their address is 20 University Ave, Northeast Minneapolis.
Their daily hours are as follows: 11 am - 2 pm & 5 pm - 8 pm.
For this episode, I was honored to speak with Jesse Held. His career as a bartender and consultant has spanned across Minneapolis icons, including Town Talk Diner, Marvel Bar, Eat Street Social, Parlour, and P.S. Steak.
These days, he’s focused on his own brand, Earl Giles, which is a beverage company he started with partner Jeff Erkkila that specializes in handmade syrups and tonics.
In January, it was revealed that an Earl Giles distillery was coming to Northeast Minneapolis, but with the pandemic, that’s been put on hold.
How is the beverage industry reacting to COVID-19? How can we help them and Jesse specifically? We talk about that and more.

It was great to catch up with chef Yia Vang on this episode of Food Under Fire. He made a name for himself in the Twin Cities restaurant scene with Union Hmong Kitchen: a resident food truck outside of Social Ciderwerks in Northeast Minneapolis that churns out highly creative takes on Hmong culture Southeast Asian cuisine.
At the beginning of 2020, he announced his first brick-and-mortar restaurant, Vinai. However, due to the current situation, the plans for that spot had to be put on pause.
I absolutely loved this conversation with Yia. Once we got past all the business updates in the beginning, things got surprisingly deep, hence the longer runtime. Thanks for listening!
//
Union Hmong Kitchen: The food truck is takeout only and offers large family meals. You can order online here https://unionkitchenmn.com/family-meals. They're open Wednesdays through Saturdays: Wednesday - Thursday @ 4 pm-7 pm & Saturday - Sunday @ 3 pm-7 pm.
My guest today is Heidi Andermack of Chowgirls Killer Catering. Started in 2004 with her associate Amy Brown, Chowgirls became the first "green" catering company in the state of Minnesota. Their fierce dedication to sustainable practices and quality service has won them accolades both regionally and nationally.
As expected, COVID-19 proved to be a major disruption for the company: operations had to change overnight. Their most notable pivot was helping a new initiative get off the ground called Minnesota Central Kitchen, which is a program hosted by Second Harvest Heartland and aided by Chowgirls plus several other businesses. Heidi represents a new generation of business owners who've been pushed to the edge by our global pandemic; only to come back, more resilient than ever.
//
Here's how you can help and/or get involved with Chowgirls and Minnesota Central Kitchen.
//

It was a pleasure to have Ann Kim with me for this second episode of Food Under Fire. She's gained renown for her pizza spots across the Twin Cities Metro in Minnesota: Pizzeria Lola, Hello Pizza, and Young Joni. In May 2019, Ann won "Best Chef Midwest" from the James Beard Association.
Her fourth restaurant, a highly anticipated Mexican spot called Sooki & Mimi, was slated for a July opening. This is no longer the case, yet construction and development are expected to continue. Despite the uncertainty, Ann has proven to be not only a courageous leader but also a vulnerable human being during the coronavirus pandemic.
