Matthew tells us all about his journey to become an artisan baker, after a long and distinguished career in the City of London. He talks all things sourdough - the starter or mother, the flour, their baking process and what their customers think of the products they bake in the shop. Matthew is passionate about his sourdough and his business and he's keen to encourage a better understanding of the quality of his and other artisan products.
