Leo’s Gluten Free Pizza Dough: Do not knead the dough. Make a really wet dough the day before you want to cook. Mix the ingredients without kneading, let it rise at room temperature until doubled - tripled in size then put in the fridge overnight. Instead of kneading and stretching, spread the dough thin into a baking tray, flash bake for a couple of minutes so it solidifies a bit, then add sauce and toppings and cook!
