This is a really delicious vegan dish which you can serve with rice or chapatis or is just as tasty on it's own. You will need: 5 cloves (1 tbsp crushed) of fresh garlic, 1 medium sized onion, 2 spring onions (optional), chilli, ⅛ of medium green pepper (optional), 2 plum tomatoes (optional), 1 tsp salt, 3 large potatoes, 1 can of chickpeas, small bunch of fresh spinach, small bunch of fresh coriander, 1 tsp ground cumin, 1 tbsp ground coriander, ½ tsp ground turmeric, 1 tsp tomato puree, 2 tbsp cooking oil (sunflower, olive or coconut).
