  • Recipe for Watermelon Rind Pops:

    • Approx 2 lbs watermelon rind
    • 1 c ACV
    • 1c water
    • 1/2 cup sugar
    • 1/2 cup salt
    • 1-2 star anise pod
  • Bring liquid to a boil, add watermelon rind, bring back to boil then turn off heat and cool

  • Drain & rinse the watermelon & return to the pot

  • Cover with water

  • Add 2 cucumbers cut in slices and

  • 1-2 cups torn Mint leaves

  • Mix

  • Fill plastic deli quart containers half full with mixture then add water to fill and freeze

  • Put in bucket for an icey treat. Always provide a bucket of fresh water too.
