We can travel nearly anywhere to have a pint with locals. But there’s one place we often find ourselves, a place where no-one else can go. This episode is about the experience we have in our mind, and the state of our mental health within the context of beer.

Canada is known for many cool things, especially beer. But, I’ve never been there and I don’t know much about it other than what I see in the movies. So, I asked my next guest to give us a tour of the craft and the culture of beer in Canada.

For years, I’ve heard about South East Asia as a place where one could live well for dollars a day, where the life people dream of is actually tangible. What began as an interrupted conversation about diving and life as an expatriate, took a turn into the heart of darkness to find craft beer in Southeast Asia. 

What do you think about when it comes to Southeast Asia? I’ve never been, but I’ll admit that craft beer doesn’t come to mind for me. However, that’s all changing. For those who love to dive, love the food and the people, now we’ll have a good beer to pair with all of it.

Once upon a time, American brewers traveled to Europe, rediscovered beer, and became inspired. They came home and started the craft beer revolution, disrupting the homogenous macro brew industry. I’m going to level with you. I originally didn’t want to get into beer as a profession. I was an athlete and associated the beer business with excess and a growing belly. Not only was I wrong, but my next guest proves that athleticism and beer can go hand in hand.

Between alcohol and abstinence lay nothing more than a foul-tasting stigma. At least, that’s how it used to be. Alcohol is still a choice, but flavor and experience don’t have to be compromised in the wake of that choice.

Trappist beers, as we know them, have been around for close to a hundred years. They have become a hallmark of quality, flavor and especially good for pairing with food. Many secular breweries make their own versions, called Abbey-style beers, but there is still an allure and a demand for tasting the real thing straight from the source. Beer culture is nearly as diverse and as rich as our human culture throughout the world. But, while it pains me to say this out loud, there really is more to life than just beer. When we look at all of fermentation, we can see how interconnected, yet diverse the world truly is.

As we have learned from previous episodes, the craft beer movement is not alone in our pursuit of better and more interesting flavors. In the past few decades, we have also seen a renaissance in other fermented products including bread, cheese, chocolate, wine, spirits, and saké. Saké is often referred to as rice wine, but the brewing process more closely resembles beer than wine.

If we consider flavor as a tool to create great experiences, then it really doesn’t matter where the flavor comes from. Even though this is a podcast about good beer and great experiences, having more tools in our toolbox just helps us to do our job even better. The Beer Judge Certification Program, or BJCP, works to categorize the world’s beer styles so that homebrewers can submit their brews for feedback on how well they hit the targets. These same beer style guidelines have become widely accepted as the go-to style authority because they are specific and also give us a way to communicate about beer. However, defining these styles is quite a challenge due to natural variation within a style. Even more, some styles pose another challenge because they are really similar and are differentiated only by geography, culture, or slight nuance. Defining farmhouse beers is a bit like trying to explain jazz or comfort food to someone who’s never experienced them. It usually requires a conversation because there is no single, simple definition we can all agree on. We tend to look to Belgium or France to bail us out of this pickle since Lambics, Saisons and Biers de Garde are the best known examples. In reality, farmhouse beers tend to be drinkable, complex, traditional and innovative, all at the same time. Historically, they’re humble beers brewed for laborers with the ingredients endemic to the region, but with a complexity of flavor befitting the finest restaurants.

Just a short drive outside of Austin, you can bathe in the warm Texas sun on a farm that grows world-class farmhouse beers. Through conservation, sustainability, and stewardship of the land, Jester King is one of the few places that blend the old world with the new.

My next guest gave up corporate America and set out to just make some good beer. He eventually employed the traditions and techniques found in those European countries. But, somewhere along the way he helped define American Farmhouse beers.

What do you get if you cross the mindset of a winemaker and the talented hands of a brewer to create a perfect blend of single-origin beers? You get a style-defying, exceptional brewery set deep in the heart of Californian wine country. The beers produced from this farm-style brewery are easy on the palate, but with enough character and nuance to be served in some of the finest restaurants in Napa. Beers like this require a mindset that puts ingredients first with a focus on the land and process. While winemakers often say it takes a lot of beer to make wine, in the case of my next guest, I’d say it takes a lot of wine to make beer like Mad Fritz.

While the world demands hazies, IPAs, lagers, and even trendier beverages, there is a lesser-known trend of better beer made in collaboration with the farmers who provide better ingredients. Keep an eye out for beers like this. They may be hard to find, but are worth the effort.

For a travel writer who has lived in different parts of the world, settling down in one place for a length of time makes a statement. When that person becomes both a beer writer and educator in South Africa’s emerging beer culture, she makes yet a different and even more profound statement.

I’ve never been to South Africa, but when I consider it, I think of Nelson Mandela, cooking around a braai, and surfing the perfect wave at Cape St. Francis. For me, the term Mexican Beer conjures great memories of tacos, the beach and delicious pale or dark, malty, crisp lagers brewed south of the border. Although it is not native to Mexico, the style is well known throughout the world to be refreshing and easy drinking. As the craft beer movement expands like a wave throughout the world, Mexico’s craft beer revolution is gaining some momentum and disrupting the status quo. But, well-crafted beer isn’t much without people who can discern what is noteworthy from the average.

I read a quote online recently that goes, “Challenges are what makes life interesting, and overcoming them is what makes life meaningful.” It made me think back to the early days before the craft beer movement was a thing. In the 60s and 70s home brewing was illegal, ingredients were hard to come by, equipment was built by hand, information was scarce and nobody drank dark, flavorful beer. To say that our early craft beer pioneers surmounted some steep challenges is a bit watered down. I had the opportunity to talk to one of those early pioneers, Ken Grossman, who is a brewing icon, founder, and owner of Sierra Nevada Brewing. Join us as he shares his thoughts on how overcoming challenges has shaped the past, the present and will even shape the future of Craft Beer.

Decades ago, when craft beer was the wild west of flavor and ingredients were hard to come by, assuming someone knew what to do with them, studying the quality of beer was unheard of. Sure, the big breweries probably had food scientists in their employ, but I’ll bet you a beer that was to ensure consistency for the sake of revenue. The small brewer’s who tinkered in their garages with salvaged dairy equipment back then couldn’t afford labs and likely relied on tasting alone to evaluate new beer. This school of hard knocks approach helped later generations brew smarter and to finally learn what beer could taste like. 

Every brewery, no matter how small, needs a sensory program so that bar patrons won’t become the QA team by default. Thanks to Draughtlab, the education and tools are far more accessible to small breweries and aficionados than they have ever been. 

Our next guest is a sensory scientist who spent nearly a decade at New Belgium Brewing. She now helps breweries large and small set up sensory programs and to taste all the bad beer so we consumers won’t have to.

The pilgrims on the Mayflower may have been the first Americans to create beer policy when the beer supplies, which was their only source of hydration, ran low and forced them to land short of warmer lattitudes. During the US Civil War, immigrant and first-generation American brewers demonstrated their patriotism by forming one of the first trade organizations, the US Brewer’s Association. Since then, beer policy has influenced American culture from World Wars, prohibition, a three tier system, legalization of homebrewing, trade tariffs and more. In the mid 80s, the US Brewer’s Assocation evolved into the Beer Institute and has been advocating for sound policy for the three hundred billion dollar industry ever since. 

Love it or hate it, policy and politics affects our daily lives in very complicated, even subtle ways. I recommend that the next time you go to Washington D.C. and meet with your representative, meet them at a bar and offer them a beer.
