My Journey to Discovering the Power of Living Gluten-Free For over 15 years, I suffered from chronic migraines. They were so debilitating that I had to give up my career as a dental hygienist. The bright lights were unbearable, often making me vomit or even pass out from the pain. Desperate for relief, I went back to school to become an OB/GYN sonographer, just to work in the darkness of an ultrasound room.
But the migraines continued.
When my daughter Chanelle was two years old, her health took a terrifying turn. She was dangerously underweight, her belly was swollen, and her hair began falling out in large clumps. Doctors feared the worst: cancer, leukemia, even kidney failure. After countless tests, the answer finally emerged—Chanelle had celiac disease.
As I supported Chanelle through her gluten-free journey, something incredible happened. My own symptoms started to fade. The constant migraines, fatigue, and brain fog all began to lift. That’s when I realized that celiac disease had likely been the root cause of my health problems all along.

Here’s What You Need to Know About Celiac Disease Are you struggling with digestive issues, fatigue, or brain fog but don’t know why? What Is Celiac Disease? Celiac disease is an autoimmune disorder, not just a food allergy. When someone with celiac disease eats gluten (a protein found in wheat, barley, and rye), their immune system attacks the small intestine, causing inflammation and damage to the villi—tiny structures responsible for nutrient absorption. Over time, this leads to nutrient deficiencies, digestive issues, and serious long-term health problems.
Unlike gluten sensitivity, which causes discomfort without damaging the intestine, celiac disease is permanent and requires strict, lifelong avoidance of gluten.
Common Symptoms of Celiac Disease Celiac disease doesn’t look the same for everyone. Some people experience classic digestive symptoms, while others have silent celiac disease, meaning they have no obvious stomach issues but still suffer from long-term damage.

How to Get Tested for Celiac Disease If you suspect you have celiac disease, DO NOT go gluten-free before testing—this can cause false negative results.
Step 1: Blood Test – Ask your doctor for a tTG-IgA test, the most common screening test for celiac disease. Step 2: Endoscopy – If your blood test is positive, the next step is a biopsy to confirm damage in your small intestine. Step 3: Diagnosis & Next Steps – If you’re diagnosed, the only treatment is a strict gluten-free diet for life.
The good news? Removing gluten can be life-changing. Within weeks, many people notice higher energy levels, improved digestion, and reduced inflammation!

Well, it was shocking for Mary to learn that after she was 'gluten free' for several years, her doctor told her otherwise. She is a cancer fighting- multiple auto immune disease warrior. Life isn't easy at all, but Mary shares her journey how she has had to make some changes to really thrive. The best part is- when she changed those habits- she truly has seen and felt improvements!!
I know Mary is not alone in her story. It is so important to listen to your body and treat it with the most respect and love. And sometimes that means to fine tune your eating habits and step up your gluten free groove.
Covid was a HUGE wake up call for the world and realizing how much we need to be prepared... but for those of us with celiac disease, food allergies or an intolerances...it felt like a major slap in the face- 'get it together'! We were in survival mode!
So now that the shelves in the grocery store are stocked up again, it is important to get our shelves stocked in our homes too, so that no matter what happens in the world around us, we are not in fear about what we are going to eat.

Since recording this episode 3 weeks have gone by and Maria has been become my personal trainer and has me all sorts of sore and feeling my best. Today I have one of my favorite friends here on the show! Meg is an Italian trained chef and momma of 3. She is the owner and creator of the More Momma Blog and Cooking School. There are quite a few aspects of going gluten free. I mean honestly this is a big change. Food happens to be what most of our lives revolve around! Have you ever gone to a party where they didn’t serve food? It seems bonkers doesn’t it? Do you need a 504 plan with Celiac Disease and being 100% gluten free? What I first thought of a 504 plan I was told it was my right That I was entitled to it And for all those that know me… know that I do not feel entitled to anything. I am not the victim. I will not play into that role. What I learned since then learned that a 504 Plan is… to protect our child educate staff hold them accountable for their treatment towards our children to help plan for the year prepared for emergencies and every day life to make sure that staff and students have a positive attitude toward my child to make sure my child doesn’t take advantage of the situation either. TEACH YOUR CHILD TO BE THEIR OWN ADVOCATE. PRACTICE. ROLE PLAY. BUILD CONFIDENCE. What is a 504 Plan (a lot of what I am resourcing and quoting from today from BeyondCeliac.org) A 504 plan stems from Section 504 of the Rehabilitation Act of 1973. This section prevents discrimination against public school students in grades K through 12 because of disabilities. A 504 plan is meant to “remove barriers” to learning by providing a specific outline on how to make accommodations or modifications on a student-by-student basis. What’s the Rehabilitation Act of 1973? The Rehabilitation Act of 1973 applies to all institutions receiving federal financial assistance, such as public schools. Under this law, public schools must provide a free, appropriate public education and not discriminate against disabled students. This law acknowledges that the disability may not require special education services, but a plan is needed to ensure the student receives an appropriate education accommodating the disability within the classroom. This law must accommodate a special diet, including the gluten-free diet for children with celiac disease. Do you have to have a 504 Plan? This decision is entirely up to you as a parent or guardian. Some parents find that informal discussions and accommodations have been sufficient for having the child’s needs met at school. However, having a formal 504 plan in place is valuable, especially as teachers and staffing may change. The 504 plan guarantees by law that your child’s needs are met throughout their school career and not just in certain classrooms. You can choose to utilize your 504 plan accommodations at any time and having them in place before you need them can save important time and resources if your child develops symptoms from gluten exposure or if you are having trouble with consistent accountability. How do you get a 504 plan started? To get started, you’ll need to contact your child’s school. The 504 plan team should include: • Primary classroom teacher • School counselor or psychologist • School nurse • Director of food services • 504 plan coordinator You’ll also need a doctor’s note to show that your child has been formally diagnosed with celiac disease or non-celiac gluten sensitivity (‘gluten sensitivity’). This note should outline the accommodations required to maintain your child’s health, enabling him or her to have equal access to public education. What information is included in a 504 plan? Generally, you’ll need to provide information about your child’s diagnosis and needs, including: • Year of diagnosis • Amount of time on a gluten-free diet • Details on why a 504 plan is needed (including how a restricted diet affects a major life activity) • Child’s developmental level and needs (Are they self-reliant in managing the diet? Do they need strict supervision? Etc.) A 504 plan will specifically outline all of the details of how your child’s celiac disease needs to be managed in the classroom. For example, you and the 504 plan team can develop an action plan for: • Navigating school lunches • Snacks • Birthday parties • Art class The plan will lay out specific accountabilities. Having a 504 plan in place will also make it much easier to apply for disability accommodation in college. Goals of the 504 Plan: 1. Adhering to all aspects of the 504 plan to avoid gluten. 2. Food Allergy Education, Awareness and Reaction Prevention The basic question to be answered and discussed in this section of the 504 plan: What kind of training needs to take place to promote education, awareness and reaction prevention in the school context? School to provide gluten free play dough in the classroom to prevent contamination. 4. All adults that come in contact with student during school day, recess, lunch/snack time, shall be trained about accommodations. 5. Student to wash hands prior to eating snacks or lunch. 6. Parent to provide gluten free food for emergency backpack in the event of an emergency 7. Parent to provide a gluten free snack for unexpected parties/events (this will allow student to participate safely) 8. Approved snacks include anything gluten free such as: Hershey kisses, starburst, plain m&m’s etc. 9. Teacher to provide 24 hour notice for class parties/events that include food so parent can provide alternate snack 10. Teacher/school will ensure accommodation plan will be in sub- folder and teacher leaves notes on lesson plans to ensure proper notification. 11. 💁🏼♀️Have you ever had the thought, I just can’t eat anything!? I sure did after being newly diagnosed, specifically after my first trip to the grocery store. Literally, I wandered helplessly for 3 1/2 hours checking package by package, isle by isle to on leave with 2 items in my cart. I thought I was prepared… I looked on Pinterest before heading their and I even had downloaded an app to help scan items… but to my frustration and despair I could not get any kind of reception at the store… so there I was… trying to understand how to read a label, not even understanding the overfilled gibberish list of ingredients I found on the packages… I have shared before that I went home sobbing, feeling so lost… and telling myself and believing the words ‘I can’t eat anything.

Let’s dive in to the nitty gritty of todays episode… now this topic of I can’t eat anything has been one that I have worked on and would like to squash this belief for you too.
Last year my sister in law and brother were did the Whole 30 diet. (which I have sense done and completely loved it and really would recommend it to anyone) but back to their journey… I wasn’t too familiar with the whole30 diet so I asked my sister in law so many questions… I asked her ‘ so what is the whole30?’ Now she is a very optimistic person and is one that I often lean on for strength and positivity… but in answering this question, she began to tell me ALL of the things she couldn’t eat. And let me tell you the list was long. It is interesting… because when she told me she was doing the diet, she was excited and hopeful that it would help her with several health issues. But when I asked her details, her tone changed and she seemed more helpless than anything. After listening to her for about 5 minutes try to remember all that she couldn’t consume, I stopped her… and I said wait a minute… I don’t really want to hear all that you can’t have… tell me what you can have… her entire demeanor changed and she happily told me all the foods she can eat… and then just then it was like a light bulb a-ha moment for me… with gluten free and celiac living, how often do we dwell on what we can not have versus truly the infinite number of foods we can have.
Moral of the story… Focus on what you can eat... holy smokes there are tons of things... almost too many things...
I googled what can gluten free people eat?
Many healthy foods are naturally gluten-free, including fruits, vegetables, fresh meat, fish and poultry, legumes, certain whole grains, dairy products and oils. Wheat, rye and barley are the major foods that need to be avoided while following a gluten-free diet.
But I am here to tell you that if you want cookies- cakes - Mac and cheese or pizza... you can have it ALL... just with a little bit of work... or hitting up a few different stores. You can make your gluten free dreams come true. If you love a certain food, like pizza… then research, test out the highest rated recipes on Pinterest and find your winning recipe!! You get to be in control of this.
Now I used to make wedding cakes… I did that for a years as I paid my way through ultrasound school… and as I would make these cakes, I had the belief system that both the looks and the taste were equally important, so you can say that I mastered the moistest cake ever!!! I was so proud of that… and actually known for making the best cakes… so when we went gluten free… this was something I knew I needed to master. I wanted to bake the most moist gluten free desserts… so, I started experimenting and bam… I got it… and the recipe is so straight forward and easy!!! I tell you this… to show you tangible evidence that I am practicing what I am preaching!!! But now I want to talk real talk… Just because you eat gluten free does not and I repeat does not mean you eat healthy… That has to be one of the biggest lies out there! I feel like Would be doing you a massively big disservice if I don’t share with you the importance of what gluten free foods we are consuming… I know we need to work in baby steps so we don’t go into a place of overwhelm and depression… but if you are ready to step up your gluten free game… then…
I want to give you a challenge…you are already making changes in your life- trying to make healthy changes even- then I want to challenge you to not find substitutes for every single item you used to eat… of course your favorite things… well yes, live a little… and enjoy your life… but I want to share with you a warning from the Mayoclinic a resource I found…

I would share a lengthy list of ‘gluten free safe’ foods with Karalynne… she would look them over and deny almost all of them… ugh… why would she do this to us… are we restricted enough??…but I know now it is because so many of the processed gluten free foods are horrible for us and can be causing us the very inflammation that we are trying our best to help heal our body… but we aren’t allowing our body to heal if we are eating foods like that… so this guide is money!!! Allowing you to learn safer- cleaner brands and products that we can consume and get our bodies feeling our best.
So back to our process of creating this guide… Karalynne then would send me a list of better - healthier choices… but after some research I would shut her down and tell her… nope- a celiac can’t trust that product or brand… so needless to say we hustled for you… we hustled to find over 125 products that were better choices. Both safe and the healthier packaged goods, that can allow your body to heal and be performing at a higher level!! Who doesn’t want that???

When I hear the word vacation, I am just giddy inside… like yes PLEASE… sign me up! My bags are packed in my head and we are already there… but then…
Then the second, and the third, and the fourth thoughts enter my head… can we really do this… can we go there and be gluten free... safe? How would we be safe? How would we not get glutened and still enjoy our vacation?

Today we are dissecting traveling-gluten free in great detail to help you not lose your mind and actually enjoy the time away with the people you love most.
You guys- I am here to say that IT IS WORTH IT! We have got to get out and LIVE the life we have always dreamed of. Maybe we can’t just pick up our bags and go wherever the wind blows, like we used to, but guess what? The internet and technology are beautiful things… with some research and some planning, we can go to the most exotic and beautiful places around the world AND have a blast doing it!
Last month our family, all the 6 of us, went to Hawaii! It was my kids FIRST.TIME.EVER. on a plane…that is what happens when you have 4 kids in 5 years… the only getaway I was taking was to the hospital to give birth… but for reals… anyways, you can only imagine the excitement of my 9, 8, 6 & 4 year old preparing and going on a plane and then having our destination be Hawaii!!!!
Yet I knew I would lose my mind ~ heading to Hawaii with the kids before having the chance to go and scope out how I would do this with the kids. How would I ensure their gluten free safety?
So unselfishly (and maybe a little selfishly), last year, I went to Hawaii with my husband. BEST. IDEA. EVER! We scoped it all out. This way I was familiar - learned the good safe spots. Had an idea of how I can make this as stress-free as possible with kids. Cause lets face... vacationing with kids is stressful in and of itself... then you throw in celiac disease... times 3... oh forget it... haha I know my limits and so I knew I needed to have visuals in my mind before taking the little ones so I can mentally and physically prepare. Seriously... Favorite Idea of the Century! Of course any excuse to go anywhere alone with my husband is a WIN but then to go in preparation mode was therapeutic for me. I am an organizer and a fixer so yes I want to have things mapped out and in control!
You better believe I am going to keep that tradition alive and have a trip with my husband first as I establish my comfort and safety measures before I take the kids. I highly recommend this to any of you out there!!!
So BEFORE I went to Hawaii, even the first time, I did A LOT of research. And then this last time I went I did EVEN MORE research prior to going. I am used to the find me gluten free app which helps me get a good idea of what restaurants and fast food places would be safe for us. I looked on Pinterest for ideas and blog posts. I messaged Friends that I knew had been to Hawaii who are also gluten-free. I sent messages to other bloggers that I knew had gone there as well. I packed everything super well. :) Believe it or not, I even packed my seasonings since I didn’t want to buy huge containers of seasonings that would be safe while I was there in Hawaii. Each child had a Gallon Ziploc bag and filled it with snacks and fruit and other food for the plane ride to Hawaii. Once we were there and all checked into our hotel we went to Walmart and Costco. We loaded up on lots of groceries, snacks and safe foods. I also bought aluminum foil and paper plates. You might be thinking why foil? Well we use aluminum foil on the bottom of the pans in the hotel so that the food never touches the pan.
Speaking of the hotel and dishes... when I got to the hotel I put all the dishes that I believe we would be using in the dishwasher and wash them in a cycle before we use a thing. This is truly for peace of mind and a great tip Courtney from getaway Gluten Free shared with me. It makes so much sense! Don’t put the silverware back into the drawer because those drawers are the collection of every crumb that ever lived. So once the utensils are washed, I put them in a cup facing up and that is where we stored everything. The hotel provided us with a new sponge in its package I knew we were safe in that regard. I did my research and decided that there were enough restaurants and we could eat out one meal a day. That would keep my sanity and my stress levels down by just eating one meal a day out. I then cooked the rest of them in the hotel. I’m so glad We did that!
I want to go out and explore foods from other places as well, but more importantly I want to know they are safe and that no one‘s going to be sick. So mentally I knew I could handle one meal a day there. We would go and talk to the chef. We are very thorough and we make sure that our food is gluten-free safe for us.
I have to tell you that this plan wasn’t fool proof. I made an agenda that we used which planned out our itinerary of restaurants. So the very first restaurant we went to when we got off the plane (which by the way we were hungry, that was a LONG flight) didn't go as planned. Sadly when we got there we were told that they ran out of the oil that they needed to cook us fresh gluten-free foods in their designated fryer. Bummer! Literally we were all SO EXCITED to go to eat this fried chicken and french fries and literally we couldn’t eat anything there... nothing was safe. I didn’t account for that in my planning and I had no idea where to eat. By this time we were all REALLY HUNGRY. But I decided I wasn’t going to make that a big deal. I’m so glad I didn’t. Because my kids feed off of my body language (and I know that) so I need to be positive myself.
So I told the kids we are going to find something... and something fast. We then called California Pizza Kitchen that was a few miles away and ordered our food to go. I explain the severity of our need for safe gluten-free foods and they assured me that they would be safe and take all precautions for us. What a great back up plan I didn’t have that on our agenda but we were able to adapt. I truly believe that it wasn’t even a big deal because I didn’t allow it to be a big deal in my mind and in my heart and even in my stomach which that’s the hardest part.
Sometimes we have to run with the punches. Sometimes it’s not exciting news. Sometimes it’s an inconvenience. Sometimes pain is involved. Sometimes frustrations boil. But WE get to decide how we show up. Remember we didn’t go on vacation for the food. :) We went on the vacation to make fun memories with my family.
An interesting fact to note: when we went to Hawaii we were able to take fruit on the plane, on the way back we were not. You cannot bring anything agricultural back to the states from Hawaii. I learned that the hard way. So I’m letting you know so you don’t make the same mistake. You’re welcome!

I am so pumped to share with you who I chose to interview as my very first guest for The Gluten Free You & Me Podcast! One of the key elements to finding your groove as a celiac is finding safe foods to eat. I mean really, Who can you trust? What restaurants can you go to? What foods can you buy in the store? In a perfect world we would all eat whole foods and shop the ‘outside isles of the stores’. But my reality is I have 4 kids and a husband to feed all while working part time out of the house and working 3 businesses from my home. So, no I can not make everything from scratch. I truly believe we need balance in life. Even balance in our food. And I try my best to do just that. So back to my questions… really what foods can we trust? This is what I wanted to get to the bottom of. So many companies label their food as Gluten Free, but truly they are not safe for a celiac. The FDA states: 'How is “gluten-free” defined in the rule? In general, foods may be labeled “gluten-free” if they meet the definition and otherwise comply with the final rule’s requirements. More specifically, the final rule defines "gluten-free" as meaning that the food either is inherently gluten free; or does not contain an ingredient that is: 1) a gluten-containing grain (e.g., spelt wheat); 2) derived from a gluten-containing grain that has not been processed to remove gluten (e.g., wheat flour); or 3) derived from a gluten-containing grain that has been processed to remove gluten (e.g., wheat starch), if the use of that ingredient results in the presence of 20 parts per million (ppm) or more gluten in the food. Also, any unavoidable presence of gluten in the food must be less than 20 ppm. But then I asked myself… okay that’s great, but who is regulating these standards and how can I truly test the honesty and integrity of a brand? For years, I have been searching for answers... and I finally have found answers as I have gone straight to a reputable source. My name is Coral Ward and I am the founder of Gluten Free with Coral. I started our gluten free and Celiac Journey about 4 years ago when my 2 year old daughter Chanelle was first diagnosed with Celiac Disease. Since her diagnosis my youngest daughter Sadie and I have both been diagnosed. That means 3 out of the 5 of our family members have Celiac Disease.
I live a 100% gluten free lifestyle and I have to tell you that I have come to I love it! I have come to realize that I am happier and healthier than I have ever been. After years of suffering, I now have learned to listen to my body, be strong in my will power, and not let celiac disease control my life or more importantly my mind.
It hasn’t always been easy, I remember the first time I walked into the grocery store and after 3 1/2 hours I left the store with only 2 items in my cart. Crying the entire way home… I quickly realized that I needed to find my gluten free groove and fast.
